Use the popular buldak instant noodles to make a stunning bibim guksu (Korean spicy cold noodles) in less than 20 minutes! Instant ramen is mixed in a cold and spicy sauce and served with tuna and crunchy vegetables. Perfect for a quick summer meal!

What is buldak ramen?
Buldak bokkeum myun are very popular instant noodles in Korea and are known to be some of the spiciest ramyeon in the country. The term buldak literally means “fire chicken,” while bokkeum myun means stir-fried noodles. These noodles have gained massive popularity on social media, often featured in spicy noodle challenges and mukbang videos.
There are many variations of these buldak noodles, such as cheese, curry, toppoki, jajang, carbonara, and more. But today, I’ll show you how I transform the regular version (below) into bibim guksu.

What is bibim guksu?
Bibim guksu is a Korean dish consisting of cold noodles mixed in a spicy sauce, served with fresh and cold vegetables. Traditional bibim guksu is made with somyeon (thin buckwheat noodles), but in this recipe, we’re using buldak instant ramen.
The spicy sauce packet is perfect for making the base of the sauce. I’m also adding tuna, as I always like to include some fish or meat with my ramen to make it a full meal. Tuna pairs perfectly with these super spicy noodles.
Ingredient notes
- Buldak ramyun – Use a buldak ramyun with a neutral flavor, the original (the black one used in this recipe) or the red one (spicier than the black one) are perfect. Don’t use flavored ones such as carbonara, jajjang or cheese.
- Canned tuna – As mentioned, bibim guksu is not traditionally served with tuna, so you can omit it for a vegetarian and more traditional option.
Preparation
- Prepare the sauce – Mix all the sauce ingredients together.

- Prepare other ingredients – Mix tuna with mayonnaise.
- Julienne carrot, cucumbe and cabbage.


- Cook an egg. Once cooked, place the egg in cold water with ice to stop the cooking process.
- Cook the noodles – Follow the package instructions and cook the noodles for 5 minutes.
- Once cooked, rinse the noodles in cold water and place them in a bowl of ice water to chill them further.

- Assemble the dish – Mix the noodles with the sauce. If it’s too spicy, you can adjust the sauce to your liking by adding less. Place the cold noodles in a bowl, then garnish with tuna, cucumber, carrot, cabbage, and place the egg on top.

- Garnish – Sprinkle the sesame seeds and seaweed from the buldak noodles pack on top.
How to adjust the spiciness of the noodles?
Don’t hold back from trying the Korean buldak ramen just because you’ve heard they’re fire noodles. For any recipe, the level of spiciness can easily be adjusted since the chili sauce comes in a separate package. In this recipe, I actually use only half of the package. But if you prefer it even less spicy, you can use less of the sauce.
Serving suggestions
Bibim Guksu Buldak Ramyun is so tasty and satisfying on its own, but if you’d like to make it even better, here are a few things you can serve alongside it:
- Kimchi
- Korean pancakes
- Other types of banchan (Korean side dishes), such as pickled radish, bean sprouts, or marinated spinach

Buldak Ramen Bibim Guksu Style
Ingredients
- 1 pack buldak noodles
- 1 small carrot , julienne
- ⅓ cucumber , julienne
- 40 g cabbage , julienne
- 85 g canned tuna
- 2 tbsp mayonnaise
- 1 egg
sauce:
- ½ buldak noodles spicy sauce packet
- 1 tsp sugar
- ½ tsp soy sauce
- 1 tsp mirin
- 1 tsp rice vinegar
- ½ tsp sesame oil
- 1 tsp sesame seeds
Instructions
- Prepare the sauce – Mix all the sauce ingredients together.
- Prepare other ingredients – Mix tuna with mayonnaise.
- Julienne carrot, cucumbe and cabbage.
- Cook an egg. Once cooked, place the egg in cold water with ice to stop the cooking process (Note 1).
- Cook the noodles – Follow the package instructions and cook the noodles for 5 minutes.
