You’ve got to try this Korean Strawberry Latte! It’s light, sweet, and so refreshing – made with a simple mix of strawberry puree, fresh strawberry pieces, and milk. It’s super easy to whip up and seriously so good!

What is Korean strawberry milk?🍓

Okay, let me tell you about Korean strawberry milk. It’s not your regular store-bought, artificially flavored drink. This is the real deal. It’s called strawberry latte (딸기라떼 – ttalgi latte) in Korea, and it’s been super popular over the past couple of years. You’ve probably seen it in Korean dramas or spotted it in those cute, trendy cafés! Even some bakeries like Paris Baguette sell it.

On my last days with my family in Incheon this year, my brother got us one after lunch (see photo below). I absolutely loved how refreshing it was on a hot summer day.

The best part? It’s so easy to make at home, and it tastes amazing! You only need three things: fresh strawberries, sugar, and milk. That’s it. By mashing up the strawberries with sugar and letting the mixture sit for a few hours, the sugar melts into the strawberries, creating this deliciously sweet puree that’s like a loose, syrupy jam. Then you just mix it with milk, and voilà.

Why is it so popular?

Honestly, it’s just one of those drinks that hits all the right notes. It’s refreshing, sweet, creamy, and just feels like a treat without being too heavy. Plus, the pink color is so cute! If you make it at home, it looks so aesthetic too, so you can show it off on your Instagram 🙂 Trust me, it’s like drinking a strawberry cheesecake, and you’ll drink it faster than you realize.

Sweetness Level. How much sugar?

Here’s the thing, everyone makes it a little differently. Some cafés just add a light touch of sugar, while others make it more jam-like with a 1:1 sugar-to-strawberry ratio (which is sweet, but maybe a bit much for me). Personally, I like to tone down the sugar.

For a homemade version, I recommend reducing the sugar to make it a healthier treat without compromising flavor. After all, you want the natural taste of the strawberries to shine through. Plus, this way, you can avoid the sugar overload that can sometimes make this beverage feel more like a dessert than a drink. Can I use different types of milk?

If you can’t or prefer not to use dairy milk, lactose-free milk, almond milk, coconut milk, and other alternatives would work just as well. The key is to choose a milk that has a neutral or mild flavor, one that complements the strawberry taste. For example, soy milk with strawberries might not be the best flavor combination, but ultimately, it’s all about personal taste.

Preparation

  1. Make the strawberry puree  In a large bowl, combine strawberries and sugar. Mash them together using a masher or fork until you achieve a smooth strawberry puree.

  1. Transfer the puree to a sterilized jar. If you’re making a small batch to use the same day, sterilizing isn’t necessary.

  1. Refrigerate the strawberry puree for at least 4 hours, or ideally overnight, to allow the sugar to dissolve completely.
  2. Assemble the drink – When ready to serve, add 90g / ⅓ cup strawberry puree to a glass. Top with diced strawberries and ice cubes (if desired), then gently pour milk over the mixture.

Storage

If you’re making a large batch, you can store the strawberry puree in the refrigerator for up to two weeks. Just make sure to sterilize the jars, similar to how you’d do for jam. If you’d like to keep it for a bit longer, use a strawberry-to-sugar ratio of 1:1.

DO NOT mix the strawberry puree with milk in advance. Once combined, it’s best to consume it within two days for the freshest taste.

If you want to store the puree for an even longer period, you can freeze it. Simply transfer the puree into ice cube trays or a freezer-safe container, and it can be stored for several months. When you’re ready to use it, just thaw the amount you need!
