A quick and tasty pasta dish that combines sardines, cherry tomatoes, breadcrumbs, and peanuts to create a delicious mix of flavors and textures. Garnish with parsley, extra peanuts, and breadcrumbs for the perfect Italian-inspired meal!
Who doesn’t fancy a QUICK MEAL ready in 20 MINUTES? I know I do! As much as I love cooking, you’ve probably heard how much I enjoy choosing dinner from my list of fast meals. Whether it’s a busy schedule or simply needing rest, I love opting for a dish that can be on my table in less than half an hour, without compromising on taste!
This sardine pasta is a recipe created by my personal Italian chef, Alex. As a non-Italian, the main pasta dishes I used to enjoy were bolognese and carbonara. In an effort to get me to try different variations, Alex came up with this incredibly TASTY recipe a few years ago.
Ingredients
- Linguine – Our top choice for this recipe is linguine, based on our personal preference, but any type of pasta will work great! Just make sure to adjust the cooking time according to the package instructions.
- Onion – Use one small onion or half of a large onion.
- Peanuts – Peanuts complement sardines super well. They add a nutty, crunchy taste that contrasts beautifully with the soft texture and the fishy flavor of the sardines.
- Cherry Tomatoes – Cherry tomatoes bring a fresh burst of flavor to the dish. Chop them in half before cooking.
- Sardines – Use skinless and boneless tinned sardines to make your life easier. This will also help avoid any unpleasant bits of bone.
- White Wine – A few tablespoons of white wine add subtle, extra flavor to the dish.
- Breadcrumbs – When I have leftover bread (a few days old), I like to turn it into crumbs in a food processor. Otherwise, simply use panko breadcrumbs.
- Fresh Parsley – Garnish the final dish with fresh parsley. For an extra touch, you can also sprinkle some leftover breadcrumbs and peanuts on top.
Preparation
- In a pot, boil water with a pinch of salt to cook the pasta. Cook the pasta according to the package instructions.
- Prepare the onion, peanuts, and cherry tomatoes.
- In a pan over medium-high heat, cook the onion for 1 minute. Then, add the cherry tomatoes and cook for another minute.
- Add the sardines and break them into smaller pieces. Pour in the white wine and stir for 1 minute. Turn off the heat.
- Add the breadcrumbs and mix everything together.
- Add the cooked pasta and crushed peanuts to the pan. Combine with the other ingredients.
- Garnish with parsley, extra peanuts, and breadcrumbs.

Sardine Pasta

- 140 g sardines
- 45 ml white wine
- 30 g breadcrumbs (Note 2)

Instructions
