Use the popular buldak instant noodles to make a stunning bibim guksu (Korean spicy cold noodles) in less than 20 minutes! Instant ramen are mixed in a cold and spicy sauce and served with tuna and crunchy vegetables. Perfect for a quick summer meal!
Prepare the sauce – Mix all the sauce ingredients together.
Prepare other ingredients – Mix tuna with mayonnaise.
Julienne carrot, cucumbe and cabbage.
Cook an egg. Once cooked, place the egg in cold water with ice to stop the cooking process (Note 1).
Cook the noodles – Follow the package instructions and cook the noodles for 5 minutes.
Once cooked, rinse the noodles in cold water and place them in a bowl of ice water to chill them further.
Assemble the dish – Mix the noodles with the sauce. If it’s too spicy, you can adjust the sauce to your liking by adding less (Note 2). Place the cold noodles in a bowl, then garnish with tuna, cucumber, carrot, cabbage, and place the egg on top.
Garnish – Sprinkle the sesame seeds and seaweed from the buldak noodles pack on top.
Notes
1. Egg cooking time – For medium-sized eggs, I usually cook them for 6.5 minutes to achieve a yolk that’s slightly runny inside. If you prefer your eggs well done, cook them for 7-8 minutes.2. Sauce –This recipe is easily adjustable. Add more or less sauce to increase or decrease the spiciness of your noodles.
