Hwachae is a Korean summer classic made with watermelon, fruit and fizzy soda swimming in a lightly sweetened milk punch, served right out of the watermelon shell.
Make sure all your ingredients are refrigerated beforehand so everything is nice and cold.
Cut the watermelon in half – you'll only need one half for this recipe. Scoop the flesh into balls using a melon baller, or cut it into cubes, and set aside. Strain any watermelon juice collected in the shell through a sieve to remove the seeds, then pour it back over the watermelon. Remove any remaining seeds from the watermelon pieces. Transfer about half of the watermelon balls back into the empty watermelon shell (Note 4).
Chop the canned peaches and add them to the watermelon along with 4 tbsp of the peach syrup.
Add the frozen blueberries.
Pour in the Chilsung Cider, milk and sweetened condensed milk. Mix well.
Add ice if you like your hwachae extra cold. Keep in mind that the ice can dilute the drink slightly if it isn't served straight away.
Serve immediately.
Notes
1. Watermelon size– If you're using a large watermelon, you may want to make 1.5 to 2 times the recipe so you have enough liquid and fruit to fill it.2. Canned peaches– I like using canned peaches or other canned fruits in syrup because I can add some of the syrup to sweeten the milk mixture. You can also use any combination of fresh, frozen or canned fruits you like.3. Sweetened condensed milk– Adjust the amount to taste depending on how sweet you like your hwachae.4. Watermelon leftovers– Once you add the other fruits and liquids, you won't be able to fit all the watermelon balls back into the shell. Keep the rest to eat later, or freeze them to make my frozen watermelon juice.
