Fais-en un <strong>riz saut\u00e9 au kimchi<\/strong> (kimchi bokkeumbap)! C&rsquo;est l&rsquo;un de ces plats cor\u00e9ens rapides, hyper r\u00e9confortants et pleins de go\u00fbt qu&rsquo;on pr\u00e9pare en quelques minutes. En Cor\u00e9e, on le fait avec ce qu&rsquo;on a sous la main, du <a href=\"https:\/\/www.thatcutedish.com\/fr\/kimchi\/\">kimchi<\/a> bien ferment\u00e9, du <a href=\"https:\/\/www.thatcutedish.com\/fr\/comment-cuire-du-riz\/\">riz<\/a> de la veille, un peu de bacon. Cette version, c&rsquo;est la technique \u00ab\u00a0ovni\u00a0\u00bb\ud83d\udef8: le riz form\u00e9 en d\u00f4me, entour\u00e9 d&rsquo;un anneau d&rsquo;\u0153ufs et de mozza fondante. M\u00eame r\u00e9confort, m\u00eame facilit\u00e9, mais avec ce finish qui fait tout.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Si tu aimes le riz saut\u00e9, tu vas aussi adorer mon <a href=\"https:\/\/www.thatcutedish.com\/fr\/riz-cantonais\/\">riz cantonais<\/a> ou mon <a href=\"https:\/\/www.thatcutedish.com\/fr\/riz-saute-au-saumon\/\">riz saut\u00e9 au saumon<\/a>.<\/p>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">Le riz saut\u00e9 au kimchi, c&rsquo;est quoi ?<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Le <em>kimchi bokkeumbap<\/em> (\uae40\uce58\ubcf6\uc74c\ubc25) est l&rsquo;un des plats les plus populaires de la cuisine cor\u00e9enne. Litt\u00e9ralement \u00ab\u00a0riz (<em>bap<\/em>) saut\u00e9 (<em>bokkeum<\/em>) au kimchi\u00a0\u00bb, c&rsquo;est un plat anti-gaspi par excellence.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">On le pr\u00e9pare avec du riz de la veille, du kimchi bien ferment\u00e9, et ce qu&rsquo;on a sous la main \u2014 bacon, spam cor\u00e9en, saucisses de Vienne. La magie vient du kimchi qui caram\u00e9lise dans la po\u00eale, enrobant chaque grain de riz d&rsquo;une saveur umami, l\u00e9g\u00e8rement piquante et fum\u00e9e.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Traditionnellement, on pose un \u0153uf au plat sur le dessus. Mais la version moderne, c&rsquo;est le riz saut\u00e9 UFO (\u00ab\u00a0ovni\u00a0\u00bb en fran\u00e7ais): le riz form\u00e9 en d\u00f4me, entour\u00e9 d&rsquo;un anneau d&rsquo;\u0153ufs battus et de mozzarella fondue. C&rsquo;est ce look qu&rsquo;on voit partout sur les r\u00e9seaux cor\u00e9ens, et c&rsquo;est la version que je te propose ici.<\/p>\n<\/div><\/div>\n\n\n<div class=\"gb-container gb-container-0b8dda5f\">\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">Ingr\u00e9dients<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Riz \u00e0 grains courts cuit la veille<\/strong> \u2014 cor\u00e9en ou japonais, c&rsquo;est ce qui donne la texture parfaite. Le riz \u00e0 grains longs ne rend pas pareil: il est trop sec et moins collant. <\/li>\n\n\n\n<li><strong>Lard <\/strong>\u2014 le plus facile \u00e0 trouver en Europe, mais des saucisses de Vienne, du spam cor\u00e9en ou de la poitrine de porc marchent tr\u00e8s bien aussi.<\/li>\n\n\n\n<li><strong>Kimchi<\/strong> \u2014 j&rsquo;utilise mon <a href=\"https:\/\/www.thatcutedish.com\/fr\/kimchi\/\">kimchi maison<\/a>, mais du kimchi du commerce fonctionne tr\u00e8s bien. L&rsquo;essentiel, c&rsquo;est qu&rsquo;il soit bien ferment\u00e9 et l\u00e9g\u00e8rement acide.<\/li>\n\n\n\n<li><strong>Jus de kimchi<\/strong> \u2014 ne le jette surtout pas. C&rsquo;est de l&rsquo;or liquide qui booste toute la saveur du plat. <\/li>\n\n\n\n<li><strong>Gochugaru<\/strong> \u2014 flocons de piment cor\u00e9en, pour le piquant caract\u00e9ristique. Si tu n&rsquo;en as pas, tu peux en trouver en \u00e9picerie asiatique ou en ligne. <\/li>\n\n\n\n<li><strong>Sauce soja cor\u00e9enne<\/strong> \u2014 plus l\u00e9g\u00e8re et moins sal\u00e9e que la sauce soja chinoise. Elle ne domine pas les autres saveurs. <\/li>\n\n\n\n<li><strong>Sucre<\/strong> \u2014 juste une pinc\u00e9e pour \u00e9quilibrer l&rsquo;acidit\u00e9 du kimchi ferment\u00e9. Si ton kimchi est encore jeune et peu acide, passe le sucre. <\/li>\n\n\n\n<li><strong>Huile de s\u00e9same<\/strong> \u2014 \u00e0 ajouter en toute fin de cuisson, hors du feu. C&rsquo;est \u00e7a qui donne ce look marbr\u00e9. <\/li>\n\n\n\n<li><strong>Mozzarella<\/strong> \u2014 r\u00e2p\u00e9e ou en lamelles, elle fond sur l&rsquo;anneau d&rsquo;\u0153uf et donne ce c\u00f4t\u00e9 filant hyper gourmand. Le riz de la veille, r\u00e9frig\u00e9r\u00e9 une nuit, a perdu son exc\u00e8s d&rsquo;humidit\u00e9. Ses grains restent s\u00e9par\u00e9s et fermes \u00e0 la cuisson.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Si tu n&rsquo;as pas de riz de la veille, \u00e9tale du riz fra\u00eechement cuit sur une plaque et mets-le au frigo pendant au moins 4 heures. Selon mon exp\u00e9rience, \u00e7a fait l&rsquo;affaire \ud83d\ude42<\/p>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">Quel kimchi utiliser ?<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Le <strong>kimchi m\u00fbr et bien ferment\u00e9<\/strong>, c&rsquo;est la cl\u00e9. Plus il a ferment\u00e9, plus il est acide, souple et savoureux, et plus il va parfumer le riz en cuisant.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Un kimchi trop jeune et trop croquant donnera un r\u00e9sultat moins intense. Tu peux quand m\u00eame l&rsquo;utiliser, mais attends-toi \u00e0 un go\u00fbt plus doux et pense \u00e0 omettre le sucre qui n&rsquo;est plus n\u00e9cessaire dans ce cas.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Si tu ach\u00e8tes du kimchi en supermarch\u00e9 asiatique, je recommande la marque <strong>NH (Nonghyup)<\/strong> en bocal plastique, c&rsquo;est celle qui se rapproche le plus du bon kimchi maison.<\/p>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">Pr\u00e9paration du riz saut\u00e9 au kimchi<\/h2>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"prepare-the-kimchi-fried-rice-\">Pr\u00e9parer le riz saut\u00e9 au kimchi<\/h3>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Couper le kimchi en petits morceaux.<\/li>\n\n\n\n<li>Faire chauffer un peu d\u2019huile de cuisson dans une po\u00eale, puis faire revenir les oignons jeunes et l\u2019ail jusqu\u2019\u00e0 ce qu\u2019ils soient parfum\u00e9s.<\/li>\n\n\n\n<li>Ajouter le lard et faire cuire jusqu\u2019\u00e0 ce qu\u2019il soit l\u00e9g\u00e8rement croustillant.<\/li>\n\n\n\n<li>Ajouter la sauce soja et m\u00e9langer bri\u00e8vement.<\/li>\n\n\n\n<li>Ajouter le kimchi, le sucre, le gochugaru et le jus de kimchi, puis faire sauter le tout quelques minutes.<\/li>\n\n\n\n<li>Ajouter le riz et bien m\u00e9langer en cassant les grumeaux pour enrober chaque grain.<\/li>\n\n\n\n<li>Terminer par un filet d\u2019huile de s\u00e9same et m\u00e9langer.<\/li>\n<\/ol>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"make-the-egg-ring\">Entourer de la pr\u00e9paration oeufs-fromage<\/h3>\n\n\n\n<ol start=\"8\" class=\"wp-block-list\">\n<li>Former un d\u00f4me avec le riz saut\u00e9 au centre de la po\u00eale.<\/li>\n\n\n\n<li>Battre l\u00e9g\u00e8rement les \u0153ufs, sans trop m\u00e9langer les jaunes et les blancs.<\/li>\n\n\n\n<li>\u00c0 feu doux, chauffer un peu d\u2019huile autour du d\u00f4me de riz.<\/li>\n\n\n\n<li>Verser les \u0153ufs battus autour du riz, puis parsemer de mozzarella.<\/li>\n\n\n\n<li>Couvrir et laisser cuire doucement jusqu\u2019\u00e0 ce que l\u2019\u0153uf soit pris et le fromage bien fondu.<\/li>\n<\/ol>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">Id\u00e9es de variation<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Sans la technique \u00ab\u00a0ovni\u00a0\u00bb<\/strong> \u2014 tu pr\u00e9f\u00e8res le style classique? Laisse le riz bien \u00e9tal\u00e9 dans la po\u00eale et pose simplement un \u0153uf au plat sur le dessus. C&rsquo;est la fa\u00e7on traditionnelle cor\u00e9enne.<\/li>\n\n\n\n<li><strong>Version 100 % fromage<\/strong> \u2014 tu veux du fromage sans l&rsquo;anneau d&rsquo;\u0153uf? Laisse le riz \u00e9tal\u00e9 dans la po\u00eale, recouvre d&rsquo;une g\u00e9n\u00e9reuse couche de mozzarella, couvre avec un couvercle \u00e0 feu doux pendant 1-2 minutes. C&rsquo;est un plat complet en lui-m\u00eame, pas besoin de grand chose \u00e0 c\u00f4t\u00e9.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Si tu veux en faire un repas plus g\u00e9n\u00e9reux, accompagne-le de <a href=\"https:\/\/fr.wikipedia.org\/wiki\/Banchan\" target=\"_blank\" rel=\"noreferrer noopener\">banchans cor\u00e9ens<\/a> : du kimchi suppl\u00e9mentaire, des \u00e9pinards cor\u00e9ens assaisonn\u00e9s (sigeumchi namul \u2014 \uc2dc\uae08\uce58 \ub098\ubb3c), ou des algues grill\u00e9es (kim \u2014 \uae40). C&rsquo;est comme \u00e7a qu&rsquo;on le sert \u00e0 la maison, en Cor\u00e9e.<\/p>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">Conserver et r\u00e9chauffer<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Conserver<\/strong> \u2014 mets les restes dans un contenant herm\u00e9tique et garde au frigo jusqu&rsquo;\u00e0 2 jours.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Congeler<\/strong> \u2014 je ne recommande pas de congeler le kimchi bokkeumbap. La cong\u00e9lation rend le riz p\u00e2teux et fait perdre au kimchi sa texture et son go\u00fbt. Mieux vaut le manger dans les 2 jours.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>R\u00e9chauffer<\/strong> \u2014 le mieux, c&rsquo;est une po\u00eale chaude avec un petit filet d&rsquo;eau. \u00c7a rel\u00e2che le riz et lui redonne vie.
