En 2017, je suis partie \u00e0 New York entre copines. Nous avions s\u00e9journ\u00e9 dans un quartier charmant appel\u00e9 Astoria. C\u2019\u00e9tait un endroit plut\u00f4t calme et chaleureux, avec des maisons typiques, \u00e0 seulement quelques arr\u00eats de m\u00e9tro du c\u0153ur de Manhattan.<\/p>\n\n\n\n<p>Le premier jour, on a d\u00e9couvert un restaurant japonais juste au coin de la rue. J\u2019ai choisi leur riz saut\u00e9 au saumon qui \u00e9tait vraiment incroyable. Il \u00e9tait tellement diff\u00e9rent de tous les riz saut\u00e9s que j\u2019avais pu go\u00fbter. <\/p>\n\n\n\n<p>Depuis ce repas inoubliable, j\u2019ai d\u00e9cid\u00e9 de recr\u00e9er ce riz saut\u00e9 au saumon incroyable dont je r\u00eave encore aujourd\u2019hui! Au fait, si tu es fan de riz saut\u00e9, tu devrais aussi jeter un \u0153il \u00e0 mon <a href=\"https:\/\/www.thatcutedish.com\/fr\/riz-cantonais\/\">riz cantonais<\/a> ou mon <a href=\"https:\/\/www.thatcutedish.com\/fr\/riz-saute-au-kimchi\/\">riz saut\u00e9 au kimchi<\/a>\ud83c\udf5a<\/p>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">Making rice properly is key!<\/h2>\n\n\n\n<p>Le riz parfait pour le riz saut\u00e9, c\u2019est celui qui a \u00e9t\u00e9 pr\u00e9par\u00e9 la veille et qui a \u00e9t\u00e9 r\u00e9frig\u00e9r\u00e9. C\u2019est vraiment la cl\u00e9 pour r\u00e9ussir n\u2019importe quel riz saut\u00e9. Les grains de riz froids sont plus fermes et supportent mieux la chaleur du wok, alors que le riz tout juste cuit est trop mou et deviendrait p\u00e2teux lorsqu&rsquo;il est saut\u00e9.<\/p>\n\n\n\n<p>Quand tu pr\u00e9pares ton riz dans un cuiseur \u00e0 riz, le rapport riz\/eau habituel est de 1:1 pour ce type de riz. Je fais g\u00e9n\u00e9ralement 2 tasses de riz pour 2 \u00e0 3 personnes, soit environ 2 tasses d\u2019eau. Mais pour le riz saut\u00e9, je mets un peu moins d\u2019eau pour que le riz ne soit pas trop cuit. Il va encore cuire un peu quand tu le feras sauter dans le wok.<\/p>\n\n\n\n<p>Pour le riz saut\u00e9, je conseille toujours d\u2019utiliser un <a href=\"http:\/\/amzn.to\/3u207Af\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">cuiseur \u00e0 riz<\/a> qui arr\u00eate la cuisson une fois que le riz est pr\u00eat, plut\u00f4t que de le cuire dans une casserole. \u00c7a r\u00e9duit vraiment le risque de le surcuire.<\/p>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">Ingr\u00e9dients<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Riz<\/strong> \u2013 Pour cette recette de riz saut\u00e9, je pr\u00e9f\u00e8re utiliser du riz \u00e0 grains courts (cor\u00e9en ou japonais). Il est plus \u00e9lastique que le riz \u00e0 grains longs et se marie parfaitement avec le saumon. C\u2019est ma pr\u00e9f\u00e9rence perso, mais tu peux utiliser du riz \u00e0 grains longs si tu pr\u00e9f\u00e8res.<\/li>\n\n\n\n<li><strong>Saumon<\/strong> \u2013 \u00c9miette le saumon pendant la cuisson pour qu\u2019il soit bien r\u00e9parti dans le riz. J&rsquo;adore ce go\u00fbt subtil de saumon dans mon riz saut\u00e9, donc je prends g\u00e9n\u00e9ralement un petit morceau. Mais si tu pr\u00e9f\u00e8res que le saumon soit plus pr\u00e9sent, n\u2019h\u00e9site pas \u00e0 en mettre un peu plus.<\/li>\n\n\n\n<li><strong>Ail<\/strong> \u2013 \u00c9crase une gousse d\u2019ail avec un presse-ail pour en extraire le jus. Cette m\u00e9thode lib\u00e8re beaucoup plus de saveur que de simplement l&rsquo;\u00e9mincer avec un couteau.<\/li>\n\n\n\n<li><strong>Oignons jeunes <\/strong>\u2013 Je pr\u00e9f\u00e8re utiliser des oignons jeunes dans le riz saut\u00e9 au saumon, plut\u00f4t que des oignons classiques. Ils ajoutent une touche fra\u00eeche et compl\u00e8tent bien le saumon.<\/li>\n\n\n\n<li><strong>\u0152ufs<\/strong> \u2013 Bats les \u0153ufs et verse-les sur le riz pour qu\u2019ils enrobent chaque grain et cuisent ensemble. Si tu pr\u00e9f\u00e8res des morceaux d\u2019\u0153ufs plus gros, mets de c\u00f4t\u00e9 les autres ingr\u00e9dients dans le wok et brouille les \u0153ufs s\u00e9par\u00e9ment.<\/li>\n\n\n\n<li><strong>Petits pois surgel\u00e9s<\/strong> \u2013 Je te conseille d\u2019utiliser des petits pois surgel\u00e9s plut\u00f4t que des petits pois en conserve. Ils ont un go\u00fbt plus frais et tiennent mieux \u00e0 la chaleur du wok, tandis que les petits pois en conserve peuvent devenir trop mous en \u00e9tant saut\u00e9s.<\/li>\n\n\n\n<li><strong>Huile de cuisson<\/strong> \u2013 Une huile neutre comme l\u2019huile v\u00e9g\u00e9tale ou l\u2019huile de canola fonctionne mieux pour les saut\u00e9s.<\/li>\n\n\n\n<li><strong>Oignons frits<\/strong> \u2013 Les oignons frits sont facultatifs, mais perso je ne peux pas faire sans dans mon riz saut\u00e9. Ca donne du croquant et une saveur top.<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">Sauce:<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Mirin (vin de riz japonais)<\/strong> \u2013 Le mirin ajoute un c\u00f4t\u00e9 l\u00e9g\u00e8rement sucr\u00e9 subtile au riz, qui \u00e9quilibre bien les saveurs sal\u00e9es.<\/li>\n\n\n\n<li><strong>Sauce aux hu\u00eetres<\/strong> \u2013 La sauce aux hu\u00eetres apporte plus de profondeur \u00e0 la sauce.<\/li>\n\n\n\n<li><strong>Sauce soja<\/strong> \u2013 Assure-toi d\u2019utiliser de la sauce soja ordinaire, pas de la sauce soja fonc\u00e9e, qui est plus sal\u00e9e et plus forte en go\u00fbt.<\/li>\n\n\n\n<li><strong>Huile de s\u00e9same<\/strong> \u2013 Une petite quantit\u00e9 d\u2019huile de s\u00e9same fait toute la diff\u00e9rence et rehausse la saveur g\u00e9n\u00e9rale du riz.<\/li>\n\n\n\n<li><strong>Poudre de poivre noir<\/strong> \u2013 Je pr\u00e9f\u00e8re utiliser de la poudre de poivre noir plut\u00f4t que des grains entiers moulus, car elle se m\u00e9lange mieux \u00e0 la sauce.<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"1200\" height=\"1800\" src=\"https:\/\/www.thatcutedish.com\/wp-content\/uploads\/2022\/04\/salmon-fried-rice-5.jpg\" alt=\"riz frit au saumon saut\u00e9 avec des petits pois.\" class=\"wp-image-12134\" srcset=\"https:\/\/www.thatcutedish.com\/wp-content\/uploads\/2022\/04\/salmon-fried-rice-5.jpg 1200w, https:\/\/www.thatcutedish.com\/wp-content\/uploads\/2022\/04\/salmon-fried-rice-5-800x1200.jpg 800w, https:\/\/www.thatcutedish.com\/wp-content\/uploads\/2022\/04\/salmon-fried-rice-5-133x200.jpg 133w\" sizes=\"auto, (max-width: 1200px) 100vw, 1200px\" \/><\/figure>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">Preparation<\/h2>\n\n\n\n<ol class=\"wp-block-list\">\n<li><strong>Cuire le riz&nbsp;<\/strong>\u2013&nbsp;<a href=\"https:\/\/www.thatcutedish.com\/fr\/comment-cuire-du-riz\/\">Pr\u00e9parer le riz<\/a>&nbsp;selon ta m\u00e9thode pr\u00e9f\u00e9r\u00e9e. Il faut qu&rsquo;il soit bien froid et qu&rsquo;il repose au r\u00e9frig\u00e9rateur au moins une demi-journ\u00e9e (de pr\u00e9f\u00e9rence une journ\u00e9e enti\u00e8re) pour \u00e9viter qu&rsquo;il ne devienne p\u00e2teux lorsqu&rsquo;il sera saut\u00e9.<\/li>\n\n\n\n<li><strong>Pr\u00e9parer le saumon<\/strong>&nbsp;\u2013 Couper le saumon en gros morceaux.<\/li>\n\n\n\n<li><strong>Pr\u00e9parer la sauce<\/strong>&nbsp;\u2013 M\u00e9langer tous les ingr\u00e9dients de la sauce dans un bol et r\u00e9server.<\/li>\n\n\n\n<li><strong>Assembler les ingr\u00e9dients<\/strong>&nbsp;\u2013 Chauffer 2 c. \u00e0 s. d\u2019huile de cuisson dans un wok \u00e0 feu moyen-vif. Ajouter l\u2019ail \u00e9minc\u00e9 et cuire pendant 30 secondes.<\/li>\n\n\n\n<li>Ajouter le saumon dans le wok et cuire pendant 2 \u00e0 3 minutes jusqu\u2019\u00e0 ce qu\u2019il soit compl\u00e8tement cuit. Utiliser une spatule ou une cuill\u00e8re pour \u00e9mietter le saumon en petits morceaux.<\/li>\n\n\n\n<li>Ajouter les oignons verts et cuire encore 30 secondes.<\/li>\n\n\n\n<li>Ajouter le riz froid dans le wok, suivi des \u0153ufs battus. S\u00e9parer le bloc de riz \u00e0 l&rsquo;aide de la spatule et faire sauter le tout pendant 1 \u00e0 2 minutes jusqu\u2019\u00e0 ce que tout soit bien m\u00e9lang\u00e9.<\/li>\n\n\n\n<li>Verser la sauce sur les bords du wok, ajouter les petits pois surgel\u00e9s et faire sauter pendant 1 \u00e0 2 minutes suppl\u00e9mentaires. Faire cuire jusqu\u2019\u00e0 ce que certains morceaux de riz soient l\u00e9g\u00e8rement croustillants.<\/li>\n\n\n\n<li><strong>Servir<\/strong>&nbsp;\u2013 Avant de servir, ajouter les oignons frits pour plus de croquant et de saveur.<\/li>\n<\/ol>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">Conservation<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>R\u00e9frig\u00e9ration<\/strong> \u2013 Le riz saut\u00e9 peut \u00eatre conserv\u00e9 dans un r\u00e9cipient herm\u00e9tique au r\u00e9frig\u00e9rateur pendant 3 \u00e0 4 jours. Si tu ajoutes des oignons frits, attends de r\u00e9chauffer le riz avant de les ajouter pour qu\u2019ils restent bien croustillants. Veille \u00e0 ce que le saumon soit bien cuit avant de le r\u00e9frig\u00e9rer, car il vaut mieux ne pas garder du saumon cru dans les restes.<\/li>\n\n\n\n<li><strong>Cong\u00e9lation<\/strong> \u2013 Tu peux congeler le riz saut\u00e9 au saumon jusqu\u2019\u00e0 1 \u00e0 2 mois. Laisse le riz refroidir compl\u00e8tement avant de le transf\u00e9rer dans un r\u00e9cipient ou un sac allant au cong\u00e9lateur. Quand tu seras pr\u00eat \u00e0 le manger, d\u00e9cong\u00e8le-le toute la nuit au r\u00e9frig\u00e9rateur.<\/li>\n\n\n\n<li><strong>R\u00e9chauffer<\/strong> \u2013 Pour r\u00e9chauffer ton riz saut\u00e9, tu peux le faire au wok (ou \u00e0 la po\u00eale), au micro-ondes ou au four. Si tu le r\u00e9chauffes congel\u00e9, il est pr\u00e9f\u00e9rable de le d\u00e9congeler d\u2019abord, mais tu peux aussi le r\u00e9chauffer directement, \u00e7a prendra juste un peu plus de temps. N\u2019oublie pas d\u2019ajouter les oignons frits apr\u00e8s pour qu\u2019ils restent croquants.<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">Servir<\/h2>\n\n\n\n<p>Ajoute un peu de <a href=\"https:\/\/en.wikipedia.org\/wiki\/Sriracha\">sriracha<\/a> pour un petit coup de piquant en plus. La <a href=\"https:\/\/en.wikipedia.org\/wiki\/Kewpie_(mayonnaise)\">Kewpie mayo<\/a> (mayonnaise japonaise) se marie aussi parfaitement avec le riz saut\u00e9 au saumon \u2013 tu peux en verser un peu sur le dessus juste avant de servir.<\/p>\n\n\n\n<p>Le riz saut\u00e9 au saumon est bien assez nourrissant pour \u00eatre servi en <a href=\"https:\/\/www.thatcutedish.com\/fr\/categorie\/type-de-plat\/plats-principaux\/\">plat principal<\/a> \u00e0 lui seul. Ce n\u2019est peut-\u00eatre pas le meilleur accompagnement pour de la viande, mais il se marie super bien avec un plat l\u00e9ger comme un plat de l\u00e9gumes ou une simple soupe si tu veux un repas
