Mes spaghettis carbonara pr\u00e9par\u00e9s selon les instructions d&rsquo;un Italien de souche, c\u2019est-\u00e0-dire mon mari!<\/p>\n\n\n\n<p>Vous ne le savez peut-\u00eatre pas, mais de nombreux non-Italiens utilisent de la cr\u00e8me comme base pour leur sauce carbonara. J\u2019en faisais partie\u2026 et, honn\u00eatement, c\u2019est probablement pour cela que je n\u2019ai jamais vraiment aim\u00e9 ce type de p\u00e2tes. <\/p>\n\n\n\n<p>Tout a chang\u00e9 lorsque j\u2019ai d\u00e9m\u00e9nag\u00e9 en Australie et que j\u2019ai rencontr\u00e9 un groupe d\u2019Italiens, dont Alex. Mes amis italiens de l\u2019\u00e9poque ont \u00e9t\u00e9 horrifi\u00e9s lorsqu\u2019ils ont d\u00e9couvert que j\u2019utilisais de la cr\u00e8me pour faire de la carbonara! \ud83e\udd23<\/p>\n\n\n\n<p>Depuis, j\u2019ai eu la chance d&rsquo;avoir un excellent prof de cuisine italienne et ai compl\u00e8tement abandonn\u00e9 ma vieille recette inauthentique. Maintenant, je fais fi\u00e8rement cette version, qui coche toutes les cases d\u2019une \u00ab\u00a0VRAIE CARBONARA ITALIENNE\u00a0\u00bb!<\/p>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">Ingr\u00e9dients<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Spaghetti<\/strong> \u2013 Mes p\u00e2tes pr\u00e9f\u00e9r\u00e9es pour la carbonara sont les spaghettis classiques, mais n\u2019h\u00e9site pas \u00e0 utiliser celles que tu pr\u00e9f\u00e8res.<\/li>\n\n\n\n<li><strong>Pancetta<\/strong> \u2013 J\u2019utilise g\u00e9n\u00e9ralement de la <a href=\"https:\/\/fr.wikipedia.org\/wiki\/Pancetta\">pancetta<\/a> pour ma carbonara, car elle est aussi largement utilis\u00e9e en Italie. Cependant, la recette vraiment traditionnelle demande du <a href=\"https:\/\/fr.wikipedia.org\/wiki\/Guanciale\">guanciale<\/a>, qui est similaire \u00e0 la pancetta, mais bien plus gras. Si tu ne trouves ni pancetta ni guanciale dans les magasins ou boucheries pr\u00e8s de chez toi, tu peux remplacer par des lardons (mais ne le dis \u00e0 personne, surtout pas aux Italiens! \ud83d\ude48). D&rsquo;apr\u00e8s ce que j&rsquo;ai compris, utiliser des lardons pour la carbonara est consid\u00e9r\u00e9 comme une option bas de gamme en Italie.<\/li>\n\n\n\n<li><strong>\u0152ufs<\/strong> \u2013 J\u2019utilise g\u00e9n\u00e9ralement une combinaison d\u2019\u0153ufs entiers et de jaunes. Assure-toi d\u2019acheter des \u0153ufs frais!<\/li>\n\n\n\n<li><strong>Pecorino<\/strong> \u2013 La vraie carbonara italienne se fait avec du pecorino. Si tu pr\u00e9f\u00e8res, tu peux aussi utiliser uniquement du pecorino, sans le m\u00e9langer avec d\u2019autres fromages.<\/li>\n\n\n\n<li><strong>Parmesan<\/strong> \u2013 Le parmesan est mon fromage pr\u00e9f\u00e9r\u00e9, alors j\u2019aime le m\u00e9langer avec du pecorino pour ma carbonara. C\u2019est aussi assez courant en Italie. Si tu n\u2019as pas de pecorino, tu peux aussi totalement le remplacer par du parmesan.<\/li>\n\n\n\n<li><strong>Poivre<\/strong> \u2013 Le poivre noir fra\u00eechement moulu est indispensable pour la carbonara, car il apporte une petite touche poivr\u00e9e et rehausse la saveur g\u00e9n\u00e9rale.<\/li>\n<\/ul>\n\n\n\n<blockquote class=\"wp-block-quote has-text-align-center is-layout-flow
