Et bien, cette recette est super similaire, sauf qu\u2019ici, le tofu remplace le poulet \u2013 une<strong> alternative PARFAITE pour les vegan<\/strong>. La deuxi\u00e8me diff\u00e9rence, c&rsquo;est qu&rsquo;il n&rsquo;y a pas de p\u00e2te. Le tofu est juste enrob\u00e9 de f\u00e9cule de ma\u00efs, ce qui le rend facile \u00e0 po\u00ealer et <strong>super croustillant<\/strong>!<\/p>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">Qu&rsquo;est-ce que le dubu gangjeong?<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">\u00ab\u00a0<strong>Dubu<\/strong>\u00a0\u00bb (\ub450\ubd80) signifie tofu, et <strong>\u00ab\u00a0gangjeong\u00a0\u00bb<\/strong> (\uac15\uc815) est un en-cas cor\u00e9en traditionnel. Normalement, le gangjeong est fait de riz souffl\u00e9 frit, enrob\u00e9 d\u2019un sirop sucr\u00e9, souvent du miel ou du sucre, puis saupoudr\u00e9 de noix, graines ou m\u00eame de haricots. C\u2019est une friandise sucr\u00e9e et croquante.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pour des plats comme le <strong>dubu gangjeong<\/strong>, on reprend un peu la m\u00eame id\u00e9e: on fait frire les aliments puis on les enrobe d\u2019un gla\u00e7age sucr\u00e9 et collant (tu peux aussi les faire revenir \u00e0 la po\u00eale si tu veux moins de gras, c\u2019est d\u2019ailleurs ma m\u00e9thode pr\u00e9f\u00e9r\u00e9e).<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Dans le dubu gangjeong, c\u2019est le tofu qui est mis \u00e0 l\u2019honneur! On le fait frire jusqu\u2019\u00e0 ce qu\u2019il soit croustillant \u00e0 l\u2019ext\u00e9rieur et moelleux \u00e0 l\u2019int\u00e9rieur, puis on le m\u00e9lange avec un gla\u00e7age sucr\u00e9 et piquant \u00e0 base de <a href=\"https:\/\/fr.wikipedia.org\/wiki\/Gochujang\">gochujang<\/a> (p\u00e2te de piment cor\u00e9en), de sauce soja et de mulyeot (sirop de ma\u00efs cor\u00e9en). C\u2019est un ap\u00e9ritif parfait, mais honn\u00eatement, parfois je le transforme en repas complet, avec du <a href=\"https:\/\/www.thatcutedish.com\/fr\/comment-cuire-du-riz\/\">riz<\/a> et d\u2019autres plats d\u2019accompagnement cor\u00e9ens (<a href=\"https:\/\/fr.wikipedia.org\/wiki\/Banchan\">banchan<\/a>).<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cette recette est pour 4 \u00e0 6 personnes, mais ne sois pas surpris si tu finis par tout finir tout seul \u2013 c\u2019est tellement addictif! \ud83d\ude48<\/p>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">Ingr\u00e9dients<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Blocs de tofu ferme<\/strong> \u2013 N\u2019utilise pas de tofu mi-ferme ou mou, car il risque de s\u2019effriter quand tu essaieras de le faire frire. Le tofu ferme garde mieux sa forme pendant la cuisson.<\/li>\n\n\n\n<li><strong>F\u00e9cule de ma\u00efs<\/strong> \u2013 La f\u00e9cule de ma\u00efs est indispensable si tu veux un tofu bien croustillant. Si la texture ultra-croustillante ne t&rsquo;importe pas trop, tu peux remplacer la f\u00e9cule de ma\u00efs par de la farine tout usage. Mais garde en t\u00eate que ton tofu ne sera pas aussi croustillant.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Quand tu fais frire le tofu \u00e0 la po\u00eale, assure-toi de le cuire de chaque c\u00f4t\u00e9 jusqu\u2019\u00e0 ce qu\u2019il soit bien dor\u00e9, mais pas trop.<\/p>\n<\/div><\/div>\n\n\n\n<div style=\"height:6px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Huile de cuisson<\/strong> \u2013 J&rsquo;ajoute une bonne quantit\u00e9 d\u2019huile pour faire frire le tofu. Mais si tu veux le frire <em>compl\u00e8tement<\/em>, ajoute assez d\u2019huile pour immerger les cubes de tofu, ou utilise une friteuse.<\/li>\n\n\n\n<li><strong>Graines de s\u00e9same<\/strong> \u2013 Facultatif, juste pour la garniture. Elles ajoutent du croquant et un petit go\u00fbt de noisette.<\/li>\n\n\n\n<li><strong>Persil s\u00e9ch\u00e9<\/strong> \u2013 Facultatif aussi, juste pour la garniture. \u00c7a apporte une touche de couleur.<\/li>\n\n\n\n<li><strong>Oignon vert<\/strong> \u2013 Facultatif \u00e9galement. Il ajoute un go\u00fbt frais et \u00e9quilibre le c\u00f4t\u00e9 sucr\u00e9 de la sauce.<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h4 class=\"wp-block-heading\">Sauce<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Il existe diff\u00e9rentes versions de ce plat. Certains ne mettent que du ketchup et du gochujang pour une version simplifi\u00e9e. Mais personnellement, j\u2019adore quand la sauce est bien collante et sucr\u00e9e, donc je mets du <a href=\"https:\/\/amzn.to\/3DlG2qO\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">sirop de ma\u00efs cor\u00e9en<\/a> ou, si tu pr\u00e9f\u00e8re, du sirop de riz cor\u00e9en. Le ketchup et le gochujang sont dilu\u00e9s dans le sirop, ce qui permet d&rsquo;\u00e9viter une sauce qui serait trop domin\u00e9e par le go\u00fbt du ketchup, comme c&rsquo;est parfois (trop souvent) le cas dans certains restaurants \u00e0 l&rsquo;\u00e9tranger.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Sucre<\/strong> \u2013 Le sucre \u00e9quilibre le piquant du gochujang et donne une petite touche sucr\u00e9e \u00e0 la sauce.<\/li>\n\n\n\n<li><strong>Sauce soja<\/strong> \u2013 Elle ajoute du sal\u00e9 et de la profondeur \u00e0 la sauce.<\/li>\n\n\n\n<li><strong>Ketchup<\/strong> \u2013 Il donne une l\u00e9g\u00e8re douceur et de l\u2019\u00e9paisseur \u00e0 la sauce.<\/li>\n\n\n\n<li><strong>Mulyeot (sirop de ma\u00efs cor\u00e9en)<\/strong> \u2013 C\u2019est un ingr\u00e9dient cl\u00e9 dans la cuisine cor\u00e9enne. Il apporte un c\u00f4t\u00e9 sucr\u00e9 riche et aide \u00e0 \u00e9paissir la sauce.<\/li>\n\n\n\n<li><strong>Gochujang (p\u00e2te de piment rouge cor\u00e9en)<\/strong> \u2013 Tu peux ajuster la quantit\u00e9 de gochujang selon le niveau de piquant que tu recherches. <\/li>\n\n\n\n<li><strong>Eau<\/strong> \u2013 L&rsquo;eau aide \u00e0 diluer la sauce pour obtenir la bonne consistance, et elle permet au gla\u00e7age d\u2019enrober uniform\u00e9ment le tofu.<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">Pr\u00e9paration<\/h2>\n\n\n\n<ol class=\"wp-block-list\">\n<li><strong>Pr\u00e9parer la sauce<\/strong>&nbsp;\u2013 M\u00e9langer tous les ingr\u00e9dients de la sauce dans un bol jusqu&rsquo;\u00e0 ce qu&rsquo;ils soient bien incorpor\u00e9s. Bien fermer le couvercle et secouer pour enrober uniform\u00e9ment tous les cubes de tofu. Faire revenir les cubes de tofu de chaque c\u00f4t\u00e9 jusqu\u2019\u00e0 ce qu\u2019ils soient bien dor\u00e9s.
