Tu aimes leur texture d\u00e9licate et moelleuse, et leur cro\u00fbte croustillante qui fond dans la bouche, mais tu redoutes de les pr\u00e9parer? <\/p>\n\n\n\n<p>J\u2019ai fait mes premiers macarons il y a environ sept ans en Belgique. Et quand je suis partie en Australie, j\u2019ai commenc\u00e9 \u00e0 faire du pain et des p\u00e2tisseries pour satisfaire mes envies. Un jour, j\u2019ai vu des photos de macarons et je me suis dit: \u00ab\u00a0Pourquoi ne pas essayer d\u2019en faire?\u00a0\u00bb Sans trop de recherches, j\u2019ai suivi une recette et, crois-le ou non, ma premi\u00e8re fourn\u00e9e s\u2019est av\u00e9r\u00e9e parfaite: des coques lisses, des pieds parfaits et aucune fissure !<\/p>\n\n\n\n<p>Quelques ann\u00e9es plus tard, je r\u00e9essaie, et l\u00e0, cette fois-ci, mes macarons sortent plats, craquel\u00e9s, avec presque pas de pieds. C\u2019est \u00e0 ce moment-l\u00e0 que j\u2019ai r\u00e9alis\u00e9 \u00e0 quel point faire des macarons pouvait \u00eatre difficile: il faut bien battre les blancs d&rsquo;\u0153ufs, ma\u00eetriser la technique du macaronnage, r\u00e9gler la temp\u00e9rature du four, et m\u00eame choisir la bonne poudre d\u2019amande. <\/p>\n\n\n\n<p>Il y a tellement de param\u00e8tres \u00e0 prendre en compte, et c\u2019est vraiment avec la pratique que l\u2019on finit par les r\u00e9ussir! Aujourd&rsquo;hui je te propose des macarons chocolat-mandarine, parfait pour l&rsquo;hiver lorsque les mandarines reviennent en magasin.<\/p>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\" id=\"what-is-the-difference-between-french-italian-and-swiss-meringue\">Diff\u00e9rence entre meringue fran\u00e7aise, italienne et suisse<\/h2>\n\n\n\n<p><strong>La meringue fran\u00e7aise<\/strong> est la plus simple et la plus rapide \u00e0 r\u00e9aliser, mais elle pardonne moins les erreurs. Elle est plus d\u00e9licate que l&rsquo;italienne. Sa consistance est moelleuse \u00e0 l&rsquo;int\u00e9rieur et croustillante \u00e0 l&rsquo;ext\u00e9rieur. Pour cette m\u00e9thode, il suffit de battre le sucre et les blancs d&rsquo;\u0153ufs ensemble jusqu\u2019\u00e0 obtenir des blancs a\u00e9r\u00e9s et fermes.<\/p>\n\n\n\n<p><strong>La meringue italienne<\/strong> est un peu plus technique. Il faut chauffer le sucre et l&rsquo;eau pour faire un sirop que l\u2019on verse dans les blancs d&rsquo;\u0153ufs tout en les battant. Un thermom\u00e8tre permet de contr\u00f4ler la temp\u00e9rature du sirop. C&rsquo;est la plus stable de toutes les meringues. En termes de go\u00fbt et de consistance, la meringue italienne est plus sucr\u00e9e et moins moelleuse que la fran\u00e7aise.<\/p>\n\n\n\n<p><strong>La meringue suisse<\/strong> est un interm\u00e9diaire entre la m\u00e9thode fran\u00e7aise et italienne en termes de complexit\u00e9. Cette technique consiste \u00e0 monter les blancs d&rsquo;\u0153ufs et le sucre au bain-marie au d\u00e9but, puis \u00e0 terminer hors du feu comme pour la meringue fran\u00e7aise. De ce fait, les blancs d&rsquo;\u0153ufs deviennent tr\u00e8s denses et brillants. Sa consistance est plus ferme et moins d\u00e9licate que la meringue fran\u00e7aise.<\/p>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\" id=\"which-equipment-do-i-need-to-make-macarons\">Mat\u00e9riel requis<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Balance<\/strong>: Tu as absolument besoin d\u2019une balance pour \u00e7a. Les macarons, c\u2019est une question de pr\u00e9cision.<\/li>\n\n\n\n<li><strong>Hachoir<\/strong>: Si tu ach\u00e8tes de la poudre d\u2019amande sp\u00e9cialement con\u00e7ue pour les macarons, tu peux zapper cette \u00e9tape. Mais si tu utilises de la poudre d\u2019amande classique, je te conseille de la broyer un peu plus dans un hachoir pour la rendre super fine.<\/li>\n\n\n\n<li><strong>Mixeur ou robot de cuisine<\/strong>: C\u2019est indispensable pour battre les blancs d\u2019\u0153ufs. Ne pense m\u00eame pas \u00e0 utiliser un fouet, tu ne vas jamais r\u00e9ussir \u00e0 les monter suffisamment fermes, peu importe ta force! Certains robot de cuisine ne sont pas assez puissants, mais KitchenAid est une valeur s\u00fbre. Les batteurs \u00e0 main fonctionnent bien aussi.<\/li>\n\n\n\n<li><strong>Poche \u00e0 douille + douille<\/strong>: Tu auras besoin d\u2019une poche \u00e0 douille avec une grosse douille ronde pour pocher la meringue. J\u2019utilise une douille d\u2019un diam\u00e8tre de 1 cm. Si elle est plus petite que 7 mm, \u00e7a risque de ne pas bien fonctionner.<\/li>\n\n\n\n<li><strong>Spatule<\/strong>: C\u2019est l\u2019outil qu\u2019il te faudra pour le macaronnage (le pliage). <\/li>\n\n\n\n<li><strong>Tamis<\/strong>: Le tamisage est super important. Il faut \u00e9liminer les gros morceaux de poudre d\u2019amande et de sucre glace pour avoir des coques lisses et parfaites.<\/li>\n\n\n\n<li><strong>Papier sulfuris\u00e9<\/strong>: Tu vas pocher les coques de macarons sur du papier sulfuris\u00e9. \u00c7a les rend super faciles \u00e0 retirer une fois cuites.<\/li>\n\n\n\n<li><strong>Plaque de cuisson (facultatif)<\/strong>: Si tu en as une perfor\u00e9e, c\u2019est top, car elle permet une meilleure circulation de l\u2019air et une cuisson plus uniforme.<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"what-ingredients-do-i-need-to-make-macarons\">Ingr\u00e9dients<\/h2>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<ul class=\"wp-block-list\">\n<li><strong>Poudre d\u2019amande<\/strong>: Parfois, tu peux trouver de la poudre d\u2019amande un peu grossi\u00e8re en supermarch\u00e9, et ce n\u2019est pas id\u00e9al pour les macarons. Prends de la poudre fine, et si tu peux, choisis une poudre d\u2019amande extra-fine, particuli\u00e8rement con\u00e7ue pour les macarons.<\/li>\n\n\n\n<li><strong>Sucre glace<\/strong>: Ne le remplace pas par d\u2019autres types de sucre, comme le sucre granul\u00e9 ou en poudre, qui ne sont pas adapt\u00e9s.<\/li>\n\n\n\n<li><strong>Blancs d\u2019\u0153ufs<\/strong>: Utilise des blancs d\u2019\u0153ufs \u00e0 temp\u00e9rature ambiante. Ceux qui sortent du frigo sont plus difficiles \u00e0 monter en neige et ont tendance \u00e0 s\u2019\u00e9taler pendant la cuisson.<\/li>\n<\/ul>\n\n\n\n<blockquote class=\"wp-block-quote has-text-align-center is-layout-flow wp-block-quote-is-layout-flow\">\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\">\n<p class=\"has-text-align-left\"><strong>NOTE<\/strong>: Pas besoin de s\u00e9parer les blancs des jaunes 24 heures \u00e0 l&rsquo;avance. Honn\u00eatement, \u00e7a ne fait pas vraiment de diff\u00e9rence.<\/p>\n<\/blockquote>\n<\/blockquote>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Sucre en poudre<\/strong>: Choisis du sucre en poudre extra-fin pour un meilleur r\u00e9sultat.<\/li>\n\n\n\n<li><strong>Colorant alimentaire en gel<\/strong>: Les colorants alimentaires en gel ou en poudre sont les meilleurs pour les macarons. \u00c9vite les colorants liquides, car ils risquent de rendre ta meringue trop liquide.<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\" id=\"top-two-crucial-tips-to-avoid-failing-macarons\">Les deux conseils essentiels pour \u00e9viter de rater tes macarons!<\/h2>\n\n\n\n<p>Il y a tellement de choses qui peuvent mal se passer quand tu pr\u00e9pares des macarons, mais j\u2019ai remarqu\u00e9 que les erreurs les plus courantes viennent g\u00e9n\u00e9ralement de deux choses: les blancs d\u2019\u0153ufs ne sont pas assez fermes ou le macaronnage (le pliage) est mal fait.<\/p>\n\n\n\n<p>Pr\u00eate attention \u00e0 ces deux points pour r\u00e9ussir tes macarons :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Blancs fermes<\/strong>: Il faut battre les blancs d\u2019\u0153ufs suffisamment longtemps pour qu\u2019ils soient bien fermes. Tu sauras qu\u2019ils sont pr\u00eats quand les blancs s&rsquo;agglom\u00e8rent au centre du fouet. M\u00eame si les blancs semblent tenir quand tu retournes le bol, continue \u00e0 battre s\u2019ils ne se sont pas encore bien agglom\u00e9r\u00e9s au fouet. Si ce n\u2019est pas le cas, ta meringue risque d\u2019\u00eatre trop liquide.<\/li>\n\n\n\n<li><strong><a href=\"https:\/\/fr.wiktionary.org\/wiki\/macaronage\">Macaronage<\/a><\/strong>: V\u00e9rifie la consistance de la meringue tous les 2 ou 3 plis pour voir si elle tombe lentement comme un ruban. D\u00e8s que c\u2019est le cas, mets-la directement dans la poche \u00e0 douille et poche tes macarons. Si tu ne plies pas assez, la meringue sera trop \u00e9paisse. Si tu plies trop, elle sera trop liquide. Dans tous les cas, tes macarons risquent de ne pas \u00eatre top. C\u2019est pourquoi c\u2019est super important de v\u00e9rifier r\u00e9guli\u00e8rement que la meringue tombe bien comme un ruban.<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\" id=\"do-i-need-to-leave-macaron-shells-dry-for-an-hour-before-baking\">Dois-je laisser s\u00e9cher les coques de macarons pendant une heure avant de les cuire ?<\/h2>\n\n\n\n<p>Avant, je laissais mes coques reposer \u00e0 temp\u00e9rature ambiante pendant 1 heure pour qu\u2019elles forment une \u00ab\u00a0peau\u00a0\u00bb avant de les cuire. Mais j\u2019ai trouv\u00e9 une technique plus rapide: pr\u00e9chauffe ton four \u00e0 120 \u00b0C. Une fois qu\u2019il est chaud, \u00e9teins-le, mais laisse le ventilateur de convection allum\u00e9.<\/p>\n\n\n\n<p>Place les macarons dans le four et laisse-les \u00ab\u00a0prendre une douche\u00a0\u00bb pendant 2 minutes avec la porte l\u00e9g\u00e8rement ouverte. Apr\u00e8s 2 minutes, augmente la temp\u00e9rature \u00e0 130 \u00b0C, ferme la porte et commence la cuisson. Cette m\u00e9thode remplace le temps de s\u00e9chage \u00e0 temp\u00e9rature ambiante et donne une finition plus brillante \u00e0 tes coques.<\/p>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\" id=\"oven-temperature-and-baking-time-vary-depending-on-your-oven\">Temp\u00e9rature du four et temps de cuisson<\/h2>\n\n\n\n<p>Le temps et la temp\u00e9rature de cuisson peuvent varier selon ton four. Il faudra peut-\u00eatre faire quelques essais. Mon four est assez puissant, donc je fais cuire \u00e0 130 \u00b0C, mais si ton four est moins puissant, essaie plut\u00f4t 140 \u00b0C.<\/p>\n\n\n\n<p>Pour le temps de cuisson, \u00e7a peut varier entre 10 et 14 minutes. L\u00e0 aussi, il faudra peut-\u00eatre faire des ajustements. Les macarons sont cuits lorsqu&rsquo;ils se d\u00e9tachent facilement du papier sulfuris\u00e9.
