En Cor\u00e9e, tu peux en trouver \u00e0 tous les coins de rue, mais ici, c\u2019est plus compliqu\u00e9\u2026 Quand j\u2019\u00e9tais en Belgique, j\u2019ai cr\u00e9\u00e9 ma propre recette et fait d\u00e9couvrir le poulet frit cor\u00e9en \u00e0 mes amis et \u00e0 ma famille. Pour beaucoup, c\u2019\u00e9tait une premi\u00e8re, et crois-moi&#8230; une seule bouch\u00e9e, et tout le monde \u00e9tait conquis!<\/p>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">C\u2019est quoi le dakgangjeong?<\/h2>\n\n\n\n<p>Le <strong>dakgangjeong<\/strong> (\ub2ed\uac15\uc815), c\u2019est un poulet frit cor\u00e9en super addictif. En gros, c\u2019est du poulet d\u00e9soss\u00e9, d\u00e9coup\u00e9 en petites bouch\u00e9es, frit deux fois pour \u00eatre ultra-croustillant, puis enrob\u00e9 d\u2019une sauce collante \u00e0 tomber par terre.<\/p>\n\n\n\n<p>Le nom \u00ab\u00a0dakgangjeong\u00a0\u00bb vient de \u00ab\u00a0dak\u00a0\u00bb (\ub2ed), qui veut dire poulet, et \u00ab\u00a0gangjeong\u00a0\u00bb (\uac15\uc815), un snack cor\u00e9en traditionnel croustillant et sucr\u00e9, frit et napp\u00e9 de sauce.<\/p>\n\n\n\n<p>En Cor\u00e9e, il y a aussi un autre style de poulet frit qu\u2019on appelle le <strong>yangnyeom chicken<\/strong> (\uc591\ub150\uce58\ud0a8). Mais si on les compare, la sauce du dakgangjeong est plus \u00e9paisse et plus collante. Et bien, voil\u00e0 tout ce qui le distingue et le rend juste irr\u00e9sistible:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Double friture<\/strong> &#8211; Contrairement au poulet frit classique, qui est g\u00e9n\u00e9ralement frit une seule fois, le poulet frit cor\u00e9en (dakgangjeong) passe par <strong>deux fritures<\/strong>. R\u00e9sultat: un ext\u00e9rieur super croustillant et une viande ultra juteuse \u00e0 l\u2019int\u00e9rieur. La premi\u00e8re friture cuit partiellement le poulet et fixe la p\u00e2te. La deuxi\u00e8me friture donne cette texture croquante de folie et une belle couleur dor\u00e9e.<\/li>\n\n\n\n<li><strong>Enrobage<\/strong> &#8211; Le poulet frit cor\u00e9en est souvent enrob\u00e9 d\u2019un m\u00e9lange de farine et de f\u00e9cule de ma\u00efs, ce qui lui donne une <strong>texture extra croquante<\/strong>. \u00c7a change du poulet frit classique, qui est souvent enrob\u00e9 uniquement de farine ou de chapelure.<\/li>\n\n\n\n<li><strong>Sauce<\/strong> &#8211; Le dakgangjeong est servi avec une sauce sucr\u00e9e-sal\u00e9e. Cette sauce, collante et pleine de saveurs, apporte une complexit\u00e9 qui \u00e9l\u00e8ve le plat \u00e0 un autre niveau.<\/li>\n\n\n\n<li><strong>Assaisonnement <\/strong>&#8211; Avant d\u2019\u00eatre enrob\u00e9 et frit, le dakgangjeong est souvent assaisonn\u00e9. Ce petit twist donne au poulet un boost de saveurs d\u00e8s la premi\u00e8re bouch\u00e9e. <\/li>\n<\/ul>\n\n\n\n<p>En gros, c\u2019est cette combinaison de <strong>technique, texture et go\u00fbt<\/strong> qui rend le poulet frit cor\u00e9en si sp\u00e9cial. Ce m\u00e9lange contient de la farine, de la f\u00e9cule de ma\u00efs (pour le c\u00f4t\u00e9 extra croustillant) et des \u00e9pices qui donnent ce go\u00fbt unique \u00e0 la p\u00e2te.<\/li>\n\n\n\n<li><strong>Huile de friture<\/strong> \u2013 Pour la cuisson, j\u2019utilise une vieille po\u00eale (\u00e9vite d\u2019utiliser une po\u00eale ch\u00e8re ou avec un rev\u00eatement antiadh\u00e9sif, la friture peut l\u2019ab\u00eemer). Sinon une friteuse, \u00e7a fonctionne aussi!<\/li>\n\n\n\n<li><strong>Cacahu\u00e8tes non sal\u00e9es<\/strong> \u2013 Elles ajoutent une touche croquante qui rend ce plat encore meilleur. Utilise bien des cacahu\u00e8tes non sal\u00e9es, sinon ton poulet risque de devenir beaucoup trop sal\u00e9.<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Pour la p\u00e2te<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong><a href=\"https:\/\/amzn.to\/3pEVlFN\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">Farine pour poulet frit cor\u00e9en<\/a><\/strong><\/li>\n\n\n\n<li><strong>Eau froide<\/strong><\/li>\n<\/ul>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\">\n<p><strong>CONSEIL<\/strong>: Pour une p\u00e2te bien \u00e9paisse, m\u00e9lange le m\u00e9lange de farine et l\u2019eau dans un rapport de 1\u00bd:1. Ce type de p\u00e2te cr\u00e9e un enrobage g\u00e9n\u00e9reux qui garde le poulet croustillant pendant des heures, voire jusqu\u2019au lendemain. Si tu pr\u00e9f\u00e8res une p\u00e2te plus fine, utilise un rapport de 1:1. Par contre, elle sera un peu moins croustillante.<\/p>\n<\/blockquote>\n\n\n\n<div class=\"wp-block-group has-theme-palette-2-background-color has-background\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<p><strong>NOTE<\/strong>: <strong>Attention!<\/strong> Les farines pr\u00eates \u00e0 l\u2019emploi peuvent varier \u00e9norm\u00e9ment d\u2019une marque \u00e0 l\u2019autre. Certaines absorbent beaucoup plus d\u2019eau que d\u2019autres. Avec la farine Ottogi (celle que j\u2019utilise le plus souvent), le rapport farine\/eau de 1\u00bd:1 (210g \/ 240 ml) fonctionne parfaitement. En revanche, la farine de la marque Beksul absorbe beaucoup plus d\u2019eau, donc dans ce cas, mieux vaut utiliser un rapport farine\/eau de 1:1 (210g \/ 360 ml).<\/p>\n\n\n\n<p>Si tu utilises ma recette maison de farine pour poulet frit cor\u00e9en, cela d\u00e9pendra de la farine que tu utilises. Commence avec le rapport farine\/eau 1:1, si tu trouves la p\u00e2te trop liquide, alors passe au rapport 1\u00bd:1.<\/p>\n<\/div><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">Pour la sauce soja-ail<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Ail<\/strong> \u2013 J\u2019utilise souvent de l\u2019ail cor\u00e9en congel\u00e9, qui a un go\u00fbt plus doux. Si tu utilises de l\u2019ail frais, mets-en 2 cuill\u00e8res \u00e0 soupe au lieu de 3, car l&rsquo;ail frais a souvent un go\u00fbt beaucoup plus prononc\u00e9.<\/li>\n\n\n\n<li><strong>Sauce soja<\/strong> \u2013 Utilise de la sauce soja classique. Pas de sauce soja fonc\u00e9e ni sucr\u00e9e.<\/li>\n\n\n\n<li><strong>Vinaigre de riz<\/strong> \u2013 Il apporte une petite touche acidul\u00e9e qui \u00e9quilibre la sauce.<\/li>\n\n\n\n<li><strong>Sucre roux<\/strong> \u2013 Ne le remplace pas par du sucre blanc. Le sucre brun ajoute cette saveur caram\u00e9lis\u00e9e parfaite.<\/li>\n\n\n\n<li><strong>Mulyeot (sirop de ma\u00efs cor\u00e9en)<\/strong> \u2013 La question qui revient le plus souvent est \u00ab\u00a0par quoi puis-je remplacer le sirop de ma\u00efs cor\u00e9en? Voici ma <a href=\"https:\/\/www.thatcutedish.com\/fr\/farine-pour-poulet-frit-coreen\/\">recette<\/a> de farine pour poulet frit cor\u00e9en maison avec des ingr\u00e9dients simples que tu as s\u00fbrement d\u00e9j\u00e0 dans tes placards ou que tu peux facilement trouver au supermarch\u00e9.<\/p>\n<\/div><\/div>\n<\/div><\/div>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">Pr\u00e9paration<\/h2>\n\n\n\n<h4 class=\"wp-block-heading\">Pr\u00e9parer la sauce<\/h4>\n\n\n\n<ol class=\"wp-block-list\">\n<li>M\u00e9langer tous les ingr\u00e9dients de la sauce dans un bol. Mettre de c\u00f4t\u00e9.<\/li>\n<\/ol>\n\n\n\n<h4 class=\"wp-block-heading\">Pr\u00e9parer le poulet<\/h4>\n\n\n\n<ol start=\"2\" class=\"wp-block-list\">\n<li>D\u00e9coupe les cuisses de poulet en petits morceaux, de la taille d&rsquo;une bouch\u00e9e.<\/li>\n\n\n\n<li>Assaisonner le poulet avec l&rsquo;ail \u00e9minc\u00e9, une pinc\u00e9e de sel et du poivre.<\/li>\n\n\n\n<li>Dans un grand bol, m\u00e9langer la farine pour poulet frit cor\u00e9en avec l&rsquo;eau froide.<\/li>\n\n\n\n<li>Plonger les morceaux de poulet dans la p\u00e2te et bien les enrober. Dans un r\u00e9cipient assez large, ajoute les 3\/4 de la farine pour poulet frit cor\u00e9en (pour l&rsquo;enrobage), d\u00e9pose les morceaux de poulet. Ajoute le reste de la farine. Ferme le couvercle et secoue bien pour enrober les morceaux de poulet de fa\u00e7on uniforme. R\u00e9p\u00e9ter cette \u00e9tape par lots si n\u00e9cessaire. Faire frire les morceaux de poulet en plusieurs lots pendant environ 6 minutes, jusqu&rsquo;\u00e0 ce qu&rsquo;ils soient cuits aux 3\/4. Retirer les morceaux et les poser sur une grille recouverte de papier absorbant.<\/li>\n\n\n\n<li>Augmenter la temp\u00e9rature de l&rsquo;huile \u00e0 180 \u00b0C et frire une deuxi\u00e8me fois pendant 1 minute pour rendre le poulet dor\u00e9 et ultra-croustillant.
