Le dakgalbi a tout ce que j\u2019aime: du poulet bien juteux, une sauce piquante super savoureuse et des l\u00e9gumes qui impr\u00e8gnent cette incroyable saveur.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Chaque fois que je retourne en Cor\u00e9e, le premier restaurant o\u00f9 je vais est presque toujours un restaurant de dakgalbi, si pas un barbecue. Comme je vis \u00e0 l\u2019\u00e9tranger et que les restaurants cor\u00e9ens ici ne proposent g\u00e9n\u00e9ralement pas de dakgalbi authentique, je le pr\u00e9pare chez moi pour satisfaire mes envies\ud83d\ude0a<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Et apr\u00e8s avoir mang\u00e9 un dakgalbi, j\u2019adore m&rsquo;offrir un petit <a href=\"https:\/\/www.thatcutedish.com\/fr\/mango-bingsu\/\">bingsu<\/a> bien frais en dessert, surtout l\u2019\u00e9t\u00e9.<\/p>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">Qu&rsquo;est-ce que le dakgalbi?<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Le <strong>dakgalbi <\/strong>(\ub2ed\uac08\ube44) vient de Chuncheon, une ville en Cor\u00e9e et la capitale de la province de Gangwon. Le nom \u00ab\u00a0dakgalbi\u00a0\u00bb signifie en fait \u00ab\u00a0ribs de poulet\u00a0\u00bb, mais ne t&rsquo;y trompe pas, il n&rsquo;y a pas de ribs! Ce plat est fait de cuisses de poulet d\u00e9soss\u00e9es coup\u00e9es en morceaux et marin\u00e9 dans une sauce piquante incroyable \u00e0 base de <a href=\"https:\/\/fr.wikipedia.org\/wiki\/Gochujang\" target=\"_blank\" rel=\"noreferrer noopener\">gochujang<\/a> (p\u00e2te de piment rouge cor\u00e9en) et de <a href=\"https:\/\/fr.m.wikipedia.org\/wiki\/Fichier:Gochugaru.jpg\" target=\"_blank\" rel=\"noreferrer noopener\">gochugaru<\/a> (flocons de piment rouge).<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ce qui rend le dakgalbi vraiment sp\u00e9cial, c\u2019est la fa\u00e7on dont tout se m\u00e9lange. Le poulet est saut\u00e9 avec <strong>du chou blanc, des patates douces cor\u00e9ennes, des feuilles de kkaennip et des g\u00e2teaux de riz<\/strong> moelleux. Les l\u00e9gumes absorbent toute cette sauce piquante et savoureuse. Et crois-moi, le chou est indispensable. Si tu dois sauter un l\u00e9gume, n&rsquo;omet surtout pas le chou, c\u2019est vraiment lui qui fait la diff\u00e9rence dans ce plat!<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Et voici une petite variante sympa: j\u2019adore ajouter une bonne quantit\u00e9 de fromage mozzarella au centre de la po\u00eale. Ce n\u2019est pas vraiment \u00ab\u00a0traditionnel\u00a0\u00bb mais de nombreux restaurants cor\u00e9ens font cette version modernis\u00e9e maintenant. On l&rsquo;appelle le <em><strong>cheese dakgalbi<\/strong><\/em>, ou dakgalbi au fromage \u2013 comme celui que j&rsquo;ai mang\u00e9 l&rsquo;\u00e9t\u00e9 dernier \u00e0 <a href=\"https:\/\/jangindak.co.kr\/\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">Jangin Dakgalbi<\/a> \u00e0 S\u00e9oul (voir la photo ci-dessous). Tu trempes le poulet piquant dans le fromage fondu, et c\u2019est juste parfait. Apr\u00e8s, si tu pr\u00e9f\u00e8res rester dans le traditionnel, tu peux tout \u00e0 fait te passer du fromage.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Le meilleur dans tout \u00e7a? C\u2019est vraiment facile \u00e0 faire. La poitrine de poulet est trop s\u00e8che pour le dakgalbi.<\/li>\n\n\n\n<li><strong>chou blanc<\/strong> &#8211; coupe le chou en carr\u00e9s de 3 cm.<\/li>\n\n\n\n<li><strong>patate douce cor\u00e9enne<\/strong> &#8211; ne remplace pas les patates douces cor\u00e9ennes (\u00e0 chair blanche) par des patates douces occidentales (\u00e0 chair orange). Les saveurs sont compl\u00e8tement diff\u00e9rentes et les patates douces occidentales ne conviennent pas. Si tu ne trouves pas de patates douces cor\u00e9ennes, tu peux les omettre.<\/li>\n\n\n\n<li><strong>oignon<\/strong> &#8211; tranche les oignons plut\u00f4t que de les \u00e9mincer. <\/li>\n\n\n\n<li><strong>oignons jeunes <\/strong>&#8211; \u00e9mince les oignons jeunes.<\/li>\n\n\n\n<li><strong>feuilles de kkaennip<\/strong> &#8211; ces feuilles ressemblent aux feuilles de p\u00e9rilla japonaises, mais elles ont une saveur diff\u00e9rente. Elles peuvent \u00eatre difficiles \u00e0 trouver, mais elles ajoutent une super saveur au dakgalbi. Si tu ne les trouves pas, tu peux les omettre.<\/li>\n\n\n\n<li><strong><strong>mozzarella<\/strong> r\u00e2p\u00e9e<\/strong> &#8211; l\u2019ajout de mozzarella est facultatif, mais je te le recommande \ud83d\ude42<\/li>\n\n\n\n<li><strong>persil s\u00e9ch\u00e9<\/strong> &#8211; saupoudre un peu de persil s\u00e9ch\u00e9 sur la mozzarella fondue. C\u2019est juste pour la pr\u00e9sentation, \u00e7a ne change pas vraiment le go\u00fbt.<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h4 class=\"wp-block-heading\">Sauce:<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>gousses d&rsquo;ail<\/strong> &#8211; l&rsquo;ail est un aliment de base des marinades cor\u00e9ennes. \u00c9crase-le au presse-ail plut\u00f4t que de le hacher pour lib\u00e9rer tout le jus et intensifier la saveur.<\/li>\n\n\n\n<li><strong>gingembre<\/strong> &#8211; r\u00e2pe ou hache du gingembre frais pour la marinade.<\/li>\n\n\n\n<li><strong>sucre<\/strong> &#8211; il ajoute un c\u00f4t\u00e9 sucr\u00e9 subtile pour \u00e9quilibrer la sauce piquante.<\/li>\n\n\n\n<li><strong>gochugaru (flocons de piment rouge cor\u00e9en)<\/strong> &#8211; j&rsquo;aime mettre un peu plus de gochugaru que de gochujang dans mes sauces cor\u00e9ennes piquantes. Car \u00e7a apporte un piquant agr\u00e9able et bien \u00e9quilibr\u00e9.<\/li>\n\n\n\n<li><strong>sauce soja<\/strong> &#8211; utilise de la sauce soja cor\u00e9enne pour un r\u00e9sultat plus authentique. \u00c9vite la sauce soja chinoise dark, qui a une saveur plus forte et peut dominer le plat.<\/li>\n\n\n\n<li><strong>mirin (vin de riz)<\/strong> &#8211; le mirin ajoute une profondeur et de la douceur \u00e0 la marinade.<\/li>\n\n\n\n<li><strong>mulyeot (sirop de ma\u00efs cor\u00e9en)<\/strong> &#8211; j\u2019ajoute g\u00e9n\u00e9ralement 1 c.\u00e0.s de mulyeot pour donner au plat un joli fini brillant et un peu plus de sucr\u00e9. Si tu n\u2019en as pas, ce n\u2019est pas grave, tu peux t\u2019en passer.<\/li>\n\n\n\n<li><strong>gochujang (p\u00e2te de piment rouge cor\u00e9en)<\/strong> &#8211; le gochujang est essentiel, ne le remplace pas. Il n\u2019y a pas de substitution pour le gochujang!<\/li>\n\n\n\n<li><strong>huile de s\u00e9same<\/strong><\/li>\n\n\n\n<li><strong>poivre noir<\/strong><\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h4 class=\"wp-block-heading\">Riz saut\u00e9:<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>riz froid<\/strong> &#8211; utilise toujours du riz r\u00e9frig\u00e9r\u00e9 pour faire du riz frit. Le riz fra\u00eechement cuit rendra le riz frit trop p\u00e2teux.<\/li>\n\n\n\n<li><strong>huile de s\u00e9same<\/strong> &#8211; ajoute de l&rsquo;huile de s\u00e9same pour assaisonner le riz.<\/li>\n\n\n\n<li><strong>algues sal\u00e9es<\/strong> &#8211; c\u2019est facultatif, mais \u00e7a apporte une super saveur au riz saut\u00e9.<\/li>\n\n\n\n<li><strong><strong>mozzarella<\/strong> r\u00e2p\u00e9e <\/strong>&#8211; c\u2019est aussi facultatif, mais j&rsquo;adore en ajouter un peu plus. Mais non, ils sont assez diff\u00e9rents. Le dakgalbi est plus doux et ax\u00e9 sur les l\u00e9gumes, avec un niveau de piquant mod\u00e9r\u00e9, tandis que le buldak se concentre sur un piquant intense et des saveurs fum\u00e9es.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Le <strong>dakgalbi <\/strong>est un plat saut\u00e9, avec du poulet et plein de l\u00e9gumes. Le niveau de piquant est ajustable, donc tu peux le rendre moins piquant si tu veux. C\u2019est aussi un plat \u00e0 partager, en g\u00e9n\u00e9ral toujours en grandes portions. Les l\u00e9gumes absorbent la sauce, cr\u00e9ant un ensemble harmonieux. Et si tu as des restes, tu peux en faire du riz saut\u00e9!<\/li>\n\n\n\n<li>Le <strong>buldak<\/strong>, quant \u00e0 lui, est bien plus piquant, ce qui ravira les amateurs de plats piquants. Ce plat met l\u2019accent sur le poulet et la sauce piquante, avec peu de l\u00e9gumes. Il est souvent accompagn\u00e9 de riz ou de nouilles pour adoucir le c\u00f4t\u00e9 piquant. La mozzarella est parfois ajout\u00e9e, mais l\u2019objectif principal, c\u2019est vraiment le piquant!<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"1600\" height=\"2400\" src=\"https:\/\/www.thatcutedish.com\/wp-content\/uploads\/2022\/01\/dakgalbi-6.jpg\" alt=\"un morceau de poulet tremp\u00e9 dans la mozzarella fondue.\" class=\"wp-image-11779\" srcset=\"https:\/\/www.thatcutedish.com\/wp-content\/uploads\/2022\/01\/dakgalbi-6.jpg 1600w, https:\/\/www.thatcutedish.com\/wp-content\/uploads\/2022\/01\/dakgalbi-6-800x1200.jpg 800w, https:\/\/www.thatcutedish.com\/wp-content\/uploads\/2022\/01\/dakgalbi-6-133x200.jpg 133w\" sizes=\"auto, (max-width: 1600px) 100vw, 1600px\" \/><\/figure>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">Pr\u00e9paration<\/h2>\n\n\n\n<ol class=\"wp-block-list\">\n<li><strong>Pr\u00e9parer les ingr\u00e9dients<\/strong>&nbsp;\u2013 Faire tremper les g\u00e2teaux de riz dans l\u2019eau pendant que tu pr\u00e9pares le reste des ingr\u00e9dients.<\/li>\n\n\n\n<li><strong>Pr\u00e9parer la sauce<\/strong>&nbsp;\u2013 M\u00e9langer tous les ingr\u00e9dients de la sauce dans un bol jusqu\u2019\u00e0 ce que ce soit bien homog\u00e8ne.<\/li>\n\n\n\n<li><strong>Mariner le poulet<\/strong>&nbsp;\u2013 Couper les cuisses de poulet en petits morceaux (d&rsquo;environ 2 cm).<\/li>\n\n\n\n<li>Ajouter le poulet \u00e0 la sauce et laisser mariner pendant au moins 1 heure (si tu manques de temps, un peu moins c&rsquo;est aussi possible, mais une heure reste l&rsquo;id\u00e9al).<\/li>\n\n\n\n<li><strong>Pr\u00e9parer les l\u00e9gumes<\/strong>&nbsp;\u2013 Couper le chou, la patate douce, l\u2019oignon, l\u2019oignon jeune et les feuilles de kkaennip (si tu les utilises).<\/li>\n\n\n\n<li><strong>Cuire le dakgalbi<\/strong>&nbsp;\u2013 Chauffer un peu d\u2019huile de cuisson dans une grande po\u00eale \u00e0 feu moyen. Ajouter la patate douce, le chou et l\u2019oignon dans la po\u00eale. Apr\u00e8s 2-3 minutes, ajouter le poulet, les g\u00e2teaux de riz et les oignons jeunes. Cuire pendant 8 \u00e0 10 minutes ou jusqu\u2019\u00e0 ce que la patate douce, le chou et le poulet soient presque cuits. Ajouter les feuilles de kkaennip et cuire encore 1 \u00e0 2 minutes.<\/li>\n\n\n\n<li>Cr\u00e9er de l\u2019espace au centre de la po\u00eale et ajouter la mozzarella r\u00e2p\u00e9e. Baisser le feu \u00e0 moyen, couvrir la po\u00eale avec un couvercle et laisser fondre le fromage.<\/li>\n\n\n\n<li>Saupoudrer de persil s\u00e9ch\u00e9 et servir chaud.<\/li>\n\n\n\n<li><strong>Servir<\/strong>&nbsp;\u2013 Servir chaud. N&rsquo;oublie pas de garder un peu de restes pour faire du riz saut\u00e9 (une pratique courante dans les restaurants cor\u00e9ens).<\/li>\n\n\n\n<li><strong>Pr\u00e9parer le riz saut\u00e9 (facultatif)<\/strong>&nbsp;\u2013 Dans un bol, m\u00e9langer le riz froid, l\u2019huile de s\u00e9same, les algues sal\u00e9es et l\u2019oignon jeune.
