Mais pour mon blog, je pr\u00e9f\u00e8re cr\u00e9er une recette en portion individuelle, que tu puisses facilement la reproduire chez toi m\u00eame si tu es seul(e).<\/p>\n\n\n\n<p>On trouve souvent de petits cubes de cheesecake sur les bingsu ou m\u00eame \u00e0 l&rsquo;int\u00e9rieur. Mais mon inspiration pour cette recette m\u2019est venue d\u2019un <a href=\"https:\/\/fr.wikipedia.org\/wiki\/Kakig%C5%8Dri\" target=\"_blank\" rel=\"noreferrer noopener\">kakigori<\/a> \u00e0 la fraise (la version japonaise de la glace pil\u00e9e) que j\u2019ai pu gouter une fois, avec un c\u0153ur de cheesecake au centre.<\/p>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">Qu\u2019est-ce qu\u2019un bingsu ?<\/h2>\n\n\n\n<p>Le <strong>bingsu <\/strong>(\ube59\uc218) est un dessert cor\u00e9en populaire, compos\u00e9 de glace pil\u00e9e en base et garni d\u2019ingr\u00e9dients vari\u00e9s. Aujourd\u2019hui, le bingsu est souvent fait \u00e0 base de lait glac\u00e9 pil\u00e9, mais il y a plus de quinze ans, la glace pil\u00e9e \u00e9tait simplement faite avec de l\u2019eau. Tu peux encore trouver ces versions basiques, surtout dans les sup\u00e9rettes en Cor\u00e9e.<\/p>\n\n\n\n<p>Le bingsu est souvent <strong>servi avec des garnitures sucr\u00e9es <\/strong>comme des fruits, du lait concentr\u00e9, des sirops, des haricots rouges sucr\u00e9s (pat) des mini gateaux de riz ou encore de la glace. Ce dessert est connu pour sa texture l\u00e9g\u00e8re et rafra\u00eechissante, ce qui en fait un choix parfait pendant les \u00e9t\u00e9s chauds en Cor\u00e9e.<\/p>\n\n\n\n<p>Il existe une grande <strong>vari\u00e9t\u00e9 de saveurs<\/strong>, des options traditionnelles comme le <a href=\"https:\/\/www.thatcutedish.com\/fr\/patbingsu-traditionnel\/\">patbingsu<\/a> (aux haricots rouges) aux variantes modernes comme le <a href=\"https:\/\/www.thatcutedish.com\/fr\/mango-bingsu\/\">bingsu \u00e0 la mangue<\/a> ou \u00e0 la fraise. Tu trouveras m\u00eame des options plus originales, comme le bingsu tiramisu ou melon. Pour une version sans produits laitiers, tu peux opter pour du lait d\u2019amande ou de soja, mais sache que ces laits modifieront le go\u00fbt de ta glace pil\u00e9e par rapport au lait de vache.<\/li>\n\n\n\n<li><strong>lait concentr\u00e9 sucr\u00e9<\/strong> \u2013 ajoute un peu de lait concentr\u00e9 pour sucrer l\u00e9g\u00e8rement la glace pil\u00e9e.<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Garniture<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>fraises<\/strong> \u2013 pour la garniture, il est toujours mieux d\u2019utiliser des fraises fra\u00eeches. Une fois d\u00e9congel\u00e9es, les fraises surgel\u00e9es peuvent perdre de leur fermet\u00e9 et de leur fra\u00eecheur.<\/li>\n\n\n\n<li><strong>cheesecake<\/strong> \u2013 tu peux utiliser du cheesecake maison si tu en as sous la main, ou simplement acheter une part de cheesecake pour te faciliter la vie \ud83d\ude42<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h3 class=\"wp-block-heading\">coulis de fraises<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>fraises<\/strong> \u2013 pour le coulis, des fraises fra\u00eeches ou surgel\u00e9es font tous les deux tr\u00e8s bien l\u2019affaire!<\/li>\n\n\n\n<li><strong>sucre<\/strong> \u2013 ajuste la quantit\u00e9 de sucre selon tes pr\u00e9f\u00e9rences. Si tu pr\u00e9f\u00e8res un coulis plus sucr\u00e9, tu peux ajouter 1 cuill\u00e8re \u00e0 soupe de sucre au lieu d\u2019une cuill\u00e8re \u00e0 caf\u00e9, ou ajuster \u00e0 ta convenance.<\/li>\n\n\n\n<li><strong>jus de citron<\/strong> \u2013 l\u2019ajout de jus de citron apporte une note acidul\u00e9e au coulis, ce qui \u00e9quilibre bien le c\u00f4t\u00e9 sucr\u00e9. Verse le tout dans un sac avec fermeture et ferme-le bien. Choisis un sac assez grand pour que, lorsque tu poses le lait \u00e0 plat, il ne d\u00e9passe pas 0,5 cm d\u2019\u00e9paisseur. Cela rendra la glace plus facile \u00e0 casser par la suite. Congele le sac pendant au moins 5 heures ou toute la nuit. Si tu as une machine \u00e0 glace pil\u00e9e, tu peux aussi utiliser les r\u00e9cipients fournis pour y verser le lait et le lait concentr\u00e9.<\/li>\n\n\n\n<li>Une fois que le lait est bien congel\u00e9, brise-le en morceaux avec tes mains. Ensuite, prends un rouleau \u00e0 p\u00e2tisserie pour broyer davantage la glace. Cette <a href=\"https:\/\/amzn.to\/3pli5KL\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">machine \u00e0 glace pil\u00e9e<\/a> est parfaite pour piler la glace tr\u00e8s finement. C\u2019est une machine japonaise sp\u00e9cialement con\u00e7ue pour cr\u00e9er des flocons de glace ultra-fins, parfaits pour ce genre de desserts \u00e0 base de glace pil\u00e9e.<\/li>\n<\/ol>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h4 class=\"wp-block-heading\">Pr\u00e9pare le coulis de fraises<\/h4>\n\n\n\n<ol start=\"3\" class=\"wp-block-list\">\n<li>Mets les fraises, le sucre, le jus de citron et l\u2019eau dans un mixeur. Dans ce cas, je te conseille de laisser de c\u00f4t\u00e9 le cheesecake, car il risque de moins bien se marier avec la glace.<\/li>\n\n\n\n<li><strong>Cr\u00e8me chantilly <\/strong>\u2013 recouvre le bingsu d&rsquo;une bonne cuiller\u00e9e de cr\u00e8me chantilly pour une touche cr\u00e9meuse et gourmande.<\/li>\n\n\n\n<li><strong>Sauce au chocolat<\/strong> \u2013 verse un peu de sauce au chocolat sur la glace pil\u00e9e et les fraises pour une d\u00e9licieuse combinaison chocolat-fraise. Dans ce cas, j\u2019omettrais aussi le cheesecake, car le combo chocolat + cheesecake pourrait \u00eatre un peu trop sucr\u00e9.<\/li>\n\n\n\n<li><strong>Lait concentr\u00e9<\/strong> \u2013 avec le coulis de fraises, tu peux ajouter un peu de lait concentr\u00e9 sur le bingsu pour une note cr\u00e9meuse et sucr\u00e9e. M\u00eame si c\u2019est une garniture courante, je ne l\u2019ai pas incluse dans ma recette de base pour \u00e9viter un surplus de sucre, puisque le cheesecake apporte d\u00e9j\u00e0 un c\u00f4t\u00e9 sucr\u00e9.<\/li>\n\n\n\n<li><strong>Amandes effil\u00e9es ou noix concass\u00e9es <\/strong>\u2013 ajoute quelques amandes effil\u00e9es ou noix concass\u00e9es, comme des pistaches ou des noix de cajou, pour un croquant agr\u00e9able et une petite touche de saveur de noix.<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">Comment servir un bingsu?<\/h2>\n\n\n\n<p>Il est pr\u00e9f\u00e9rable de servir et de manger le bingsu tout de suite apr\u00e8s l\u2019avoir assembl\u00e9, pour \u00e9viter que la glace ne fonde et pour garder la texture parfaite.<\/p>\n\n\n\n<p>Cette recette est pr\u00e9vue pour une portion, mais tu peux facilement la doubler pour partager le bingsu et le servir \u00e0 deux !<\/p>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">Conserver et congeler<\/h2>\n\n\n\n<p>Le <strong>lait <\/strong>doit \u00eatre congel\u00e9 pendant au moins 5 heures pour qu&rsquo;il soit bien solide et se brise facilement sans fondre trop vite.<\/p>\n\n\n\n<p>Pour la conservation, tu peux pr\u00e9parer le <strong>coulis de fraises<\/strong> \u00e0 l\u2019avance. Place-le dans un r\u00e9cipient herm\u00e9tique et garde-le au r\u00e9frig\u00e9rateur jusqu\u2019\u00e0 2 jours.<\/p>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">Les conseils d&rsquo;Emma<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Utilise un grand sac en plastique<\/strong> \u2013 si tu n\u2019as pas de machine \u00e0 glace pil\u00e9e, cong\u00e8le le lait dans de grands sacs en plastique. Avec de petits sacs, le bloc de lait sera plus \u00e9pais et donc plus difficile \u00e0 briser en morceaux.<\/li>\n\n\n\n<li><strong>Cong\u00e8le bien le lait<\/strong> \u2013 pour la glace pil\u00e9e, assure-toi de congeler le lait pendant au moins 5 heures, ou m\u00eame toute la nuit. Comme cela il sera bien solide et tu pourras le briser sans qu&rsquo;il fonde trop rapidement.<\/li>\n\n\n\n<li><strong>Choisis des fraises fra\u00eeches et m\u00fbres<\/strong> \u2013 opte pour des fraises bien m\u00fbres et fra\u00eeches afin d&rsquo;obtenir la meilleure saveur pour ton bingsu. Choisis des fraises fermes, charnues et bien color\u00e9es. Tu peux utiliser des fraises surgel\u00e9es pour la pur\u00e9e, mais des fraises fra\u00eeches donneront un meilleur r\u00e9sultat.<\/li>\n\n\n\n<li><strong>Choisis un cheesecake de qualit\u00e9<\/strong> \u2013 si tu ajoutes du cheesecake en garniture, prends-en un de bonne qualit\u00e9 ou fais-le toi-m\u00eame. Assure-toi que le type de cheesecake que tu choisis se marie bien avec le go\u00fbt des fraises.<\/li>\n\n\n\n<li><strong>Ajuste le sucre<\/strong> \u2013 chacun a ses pr\u00e9f\u00e9rences donc modifie la quantit\u00e9 de sucre ou de lait concentr\u00e9 selon tes go\u00fbts.
