D&rsquo;habitude, j\u2019y allais tous les deux ans, mais ces derni\u00e8res ann\u00e9es ont tellement \u00e9t\u00e9 charg\u00e9es: d\u00e9m\u00e9nag\u00e9 d\u2019un pays \u00e0 l\u2019autre, etc. J\u2019avais pr\u00e9vu un voyage l\u2019\u00e9t\u00e9 dernier, mais j\u2019ai d\u00fb l\u2019annuler \u00e0 cause des restrictions de voyage.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Apr\u00e8s tout ce temps loin de la Cor\u00e9e, j&rsquo;ai eu des envies de <a href=\"https:\/\/www.thatcutedish.com\/fr\/categorie\/cuisine\/coreen\/\">plats cor\u00e9ens<\/a> que je mangeais dans les caf\u00e9s ou restaurants, comme le <a href=\"https:\/\/www.thatcutedish.com\/fr\/patbingsu-traditionnel\/\">patbingsu<\/a> (ce dessert glac\u00e9 incroyablement rafra\u00eechissant !). Je n&rsquo;en fais pas souvent \u00e0 la maison, mais parfois, l&rsquo;envie devient trop forte!<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Il y a quelques mois, je repensais aux petits pains au caf\u00e9 ou \u00ab\u00a0<strong>coffee buns<\/strong>\u00a0\u00bb que je mangeais \u00e0 Paris Baguette en Cor\u00e9e. C&rsquo;est l&rsquo;une des boulangeries cor\u00e9ennes les plus populaires, connue pour ses p\u00e2tisseries, croissants et pains (m\u00eame si, ironiquement, elle n&rsquo;est pas fran\u00e7aise!). J&rsquo;en avais tellement envie que j&rsquo;ai d\u00e9cid\u00e9 de me lancer et de les faire moi-m\u00eame. Apr\u00e8s quelques tentatives et ajustements, et gr\u00e2ce aux astuces du YouTubeur Cooking Tree, j&rsquo;ai enfin trouv\u00e9 la <strong><a href=\"https:\/\/www.thatcutedish.com\/fr\/pain-brioche-au-cafe\/#recipe\">recette parfaite<\/a><\/strong>. Maintenant, je peux me r\u00e9galer et faire de petits pains au caf\u00e9 comme ceux de Paris Baguette \u00e0 la maison\ud83d\ude0a<\/p>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">Les coffee buns, qu&rsquo;est-ce que c&rsquo;est?<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Les <strong>petits pains au caf\u00e9<\/strong> cor\u00e9ens ou coffee bun (\ucee4\ud53c\ubc88 &#8211; kopi-bun) en cor\u00e9en, ce sont de petites <strong>brioches ultra moelleuses <\/strong>avec un int\u00e9rieur l\u00e9ger et a\u00e9r\u00e9, et une<strong> fine cro\u00fbte croustillante au go\u00fbt de caf\u00e9 <\/strong>qui enveloppe chaque bouch\u00e9e. Le go\u00fbt du caf\u00e9 est subtil, juste assez pour go\u00fbter la saveur de caf\u00e9 sans avoir l\u2019impression de boire un espresso.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u00c0 peine sortis du four, ils te feront de l\u2019\u0153il, pr\u00eats \u00e0 \u00eatre croqu\u00e9s. Leur parfum de caf\u00e9, m\u00eal\u00e9 \u00e0 l\u2019odeur de brioche fra\u00eeche, embaume ta cuisine et rend ces petits pains tout simplement irr\u00e9sistibles. Que ce soit le matin, le midi ou le soir, crois-moi, tu n&rsquo;attendras pas l&rsquo;heure des repas pour te faire plaisir! \ud83d\ude0a<\/p>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h3 class=\"wp-block-heading\">Origines du coffee bun<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Les petits pains au caf\u00e9 cor\u00e9ens, viennent de Cor\u00e9e du Sud, mais ils s\u2019inspirent des styles de p\u00e2tisserie occidentaux. C\u2019est un vrai r\u00e9gal qu&rsquo;on retrouve dans les boulangeries et les caf\u00e9s cor\u00e9ens, notamment dans les cha\u00eenes comme <a href=\"https:\/\/www.paris.co.kr\/\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">Paris Baguette<\/a> ou <a href=\"https:\/\/www.tlj.co.kr\/index.asp\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">Tous les Jours<\/a>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">M\u00eame si ces petits pains brioch\u00e9s sont tr\u00e8s populaires en Cor\u00e9e, l\u2019id\u00e9e d\u2019une \u00ab\u00a0p\u00e2tisserie au caf\u00e9\u00a0\u00bb n&rsquo;est pas unique \u00e0 la culture cor\u00e9enne. La farine ordinaire ou la farine pour pain donneront une mie plus dense et un go\u00fbt qui se rapproche de celui du pain classique, au lieu de la saveur l\u00e9g\u00e8re et beurr\u00e9e de la brioche. Ces petits pains sont cens\u00e9s \u00eatre super moelleux et l\u00e9gers, ce qui les rend irr\u00e9sistibles et l\u00e9gers \u00e0 manger. Je te conseille donc vivement d\u2019utiliser de la farine de brioche.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Il existe plein de types de farine, alors essaie de trouver une farine sp\u00e9cifique \u00e0 brioche pour de meilleurs r\u00e9sultats. Ne la confonds pas avec la \u00ab farine pour pain \u00bb ordinaire.<\/p>\n<\/div><\/div>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>sucre en poudre<\/strong> \u2013 un sucre plus fin qui se dissout rapidement. Il aide \u00e0 sucrer la p\u00e2te sans alt\u00e9rer la texture.<\/li>\n\n\n\n<li><strong>sel<\/strong> \u2013 rehausse la saveur en \u00e9quilibrant la douceur et en contr\u00f4lant l\u2019activit\u00e9 de la levure.<\/li>\n\n\n\n<li><strong>levure instantan\u00e9e<\/strong> \u2013 une levure \u00e0 action rapide qui aide la p\u00e2te \u00e0 lever vite, cr\u00e9ant une texture l\u00e9g\u00e8re et moelleuse.<\/li>\n\n\n\n<li><strong>lait ti\u00e8de<\/strong> \u2013 active la levure et rend la p\u00e2te plus tendre en lui apportant l\u2019humidit\u00e9 n\u00e9cessaire.<\/li>\n\n\n\n<li><strong>beurre non sal\u00e9 (\u00e0 temp\u00e9rature ambiante)<\/strong> \u2013 ajoute de la richesse et rend la p\u00e2te douce et fondante.<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h4 class=\"wp-block-heading\">Pour la garniture au caf\u00e9:<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>eau chaude<\/strong> \u2013 permet de dissoudre le caf\u00e9 instantan\u00e9 et aide \u00e0 bien r\u00e9partir la saveur du caf\u00e9 dans la garniture.<\/li>\n\n\n\n<li><strong>caf\u00e9 instantan\u00e9<\/strong> \u2013 ajoute la saveur subtile du caf\u00e9 dans la garniture et donnent aux petits pains brioch\u00e9s leur go\u00fbt si sp\u00e9cial.<\/li>\n\n\n\n<li><strong>beurre non sal\u00e9 (\u00e0 temp\u00e9rature ambiante)<\/strong> \u2013 apporte de la richesse \u00e0 la garniture au caf\u00e9 et lui donne une texture lisse, parfaite \u00e0 \u00e9taler.<\/li>\n\n\n\n<li><strong>sucre en poudre<\/strong> \u2013 adoucit la garniture au caf\u00e9, \u00e9quilibrant l\u2019amertume du caf\u00e9 avec une touche sucr\u00e9e.<\/li>\n\n\n\n<li><strong>oeuf<\/strong> \u2013 aide \u00e0 lier les ingr\u00e9dients et donne une structure \u00e0 la garniture.<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">Puis-je utiliser un robot de cuisine?<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Oui, MAIS il est pr\u00e9f\u00e9rable de p\u00e9trir la p\u00e2te \u00e0 la main. Un robot de cuisine est assez puissant, m\u00eame \u00e0 faible vitesse, et peut facilement trop p\u00e9trir la p\u00e2te. Quand \u00e7a arrive, la p\u00e2te se d\u00e9chire au lieu de s\u2019\u00e9tirer lorsque tu l&rsquo;\u00e9tires. Ajouter le lait au m\u00e9lange sec.
