On le pr\u00e9pare avec du porc marin\u00e9 dans une sauce sucr\u00e9e-piquante, puis saut\u00e9 ou parfois m\u00eame grill\u00e9. Pour que la viande reste tendre et juteuse, choisis des morceaux un peu gras, comme la poitrine, l&rsquo;\u00e9chine ou l\u2019\u00e9paule de porc. Les autres morceaux risquent de rendre le plat un peu sec.<\/p>\n\n\n\n<p>La marinade, qui donne tout son caract\u00e8re au jeyuk bokkeum, est faite \u00e0 base de gochugaru (flocons de piment rouge cor\u00e9en) et adoucie avec du sucre ou de la confiture (pour remplacer le maesilcheong, un sirop cor\u00e9en d\u2019extrait de prune).<\/p>\n\n\n\n<p>Ce plat est super rapide \u00e0 pr\u00e9parer: seulement <strong>10 minutes de pr\u00e9paration<\/strong> et 30 minutes de marinade minimum. J\u2019utilise souvent l&rsquo;\u00e9chine de porc, mais tu peux aussi opter pour de l\u2019\u00e9paule ou de la poitrine de porc. Il vaut mieux utiliser une coupe un peu grasse pour que la viande reste bien tendre et juteuse. <\/li>\n\n\n\n<li><strong>oignon<\/strong><\/li>\n\n\n\n<li><strong>oignons verts<\/strong> <\/li>\n\n\n\n<li><strong>huile de s\u00e9same<\/strong> <\/li>\n\n\n\n<li><strong>graines de s\u00e9same<\/strong> <\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">marinade:<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>ail<\/strong> \u2013 je pr\u00e9f\u00e8re \u00e9craser l\u2019ail avec un presse-ail pour en lib\u00e9rer le jus, \u00e7a renforce la saveur de la marinade.<\/li>\n\n\n\n<li><strong>gochugaru<\/strong> (flocons de piment rouge cor\u00e9en) \u2013 adapte la quantit\u00e9 selon ta tol\u00e9rance aux piquant. <\/li>\n\n\n\n<li><strong>sauce soja<\/strong> \u2013 je te conseille d\u2019utiliser de la sauce soja cor\u00e9enne pour une saveur authentique. J\u2019ai essay\u00e9 avec des sauces soja de marques occidentales, mais elles sont bien plus fades par rapport \u00e0 la sauce cor\u00e9enne. La sauce soja chinoise a un go\u00fbt plus fort et diff\u00e9rent, alors pour ce plat, la sauce soja cor\u00e9enne est id\u00e9ale.<\/li>\n\n\n\n<li><strong>sauce de poisson<\/strong> \u2013 elle ajoute une touche d&rsquo;umami et de profondeur.<\/li>\n\n\n\n<li><strong>mirin<\/strong> \u2013 ce vin de riz sucr\u00e9 apporte une douceur subtile et \u00e9quilibre les saveurs sal\u00e9es.<\/li>\n\n\n\n<li><strong>confiture<\/strong> \u2013 c\u2019est un bon substitut au maesilcheong (extrait de prune cor\u00e9enne), souvent difficile \u00e0 trouver hors de Cor\u00e9e. Fais chauffer un peu d\u2019huile dans une po\u00eale \u00e0 feu moyen-vif, et fais revenir le porc marin\u00e9 jusqu\u2019\u00e0 ce qu\u2019il soit bien cuit et l\u00e9g\u00e8rement caram\u00e9lis\u00e9. Le saut\u00e9 donne au porc une texture croustillante sur les bords tout en restant juteux \u00e0 l\u2019int\u00e9rieur. C\u2019est rapide, facile et super bon!<\/li>\n\n\n\n<li><strong>Grillade<\/strong> \u2013 si tu veux quelque chose de diff\u00e9rent, essaie de griller le porc sur un barbecue (un <a href=\"https:\/\/amzn.to\/48OEK8r\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">petit gril<\/a> \u00e0 gaz cor\u00e9en est parfait pour le faire chez soi). La chaleur intense donne au porc un go\u00fbt fum\u00e9 et l\u00e9g\u00e8rement carbonis\u00e9, ce qui apporte une belle profondeur de saveur. Surveille bien pour \u00e9viter que \u00e7a br\u00fble, surtout \u00e0 cause du sucre dans la marinade!<\/li>\n\n\n\n<li><strong>Assiette chauffante <\/strong>\u2013 dans certains restaurants cor\u00e9ens, le jeyuk bokkeum est servi sur une assiette en fonte bien chaude pour que le porc reste gr\u00e9sillant pendant que tu manges. Si tu as une <a href=\"https:\/\/amzn.to\/31xHDfD\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">po\u00eale en fonte<\/a>, tu peux obtenir le m\u00eame effet en servant directement dans la po\u00eale, encore bien chaude. <\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">Ajouts<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>carottes<\/strong> \u2013 les carottes ne sont pas vraiment dans la recette traditionnelle du jeyuk bokkeum, mais elles se retrouvent parfois dans des versions modernes. Elles ajoutent une petite touche sucr\u00e9e et croquante.<\/li>\n\n\n\n<li><strong>gingembre<\/strong> \u2013 bien que ce ne soit pas toujours inclus, un peu de gingembre r\u00e2p\u00e9 dans la marinade peut apporter une touche parfum\u00e9e et l\u00e9g\u00e8rement \u00e9pic\u00e9e, tout en restant proche des saveurs traditionnelles.<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">A \u00e9viter<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>L\u00e9gumes trop lourds<\/strong> \u2013 m\u00eame si c\u2019est tentant d\u2019ajouter des l\u00e9gumes comme des courgettes, pommes de terre ou autre, le jeyuk bokkeum traditionnel reste simple, avec seulement des oignons et des oignons verts. Ajouter trop de l\u00e9gumes changerait compl\u00e8tement le plat.<\/li>\n\n\n\n<li><strong>Sauce soja occidentale et chinoise<\/strong> \u2013 Comme on l\u2019a d\u00e9j\u00e0 mentionn\u00e9, il est pr\u00e9f\u00e9rable d\u2019utiliser de la sauce soja cor\u00e9enne pour rester fid\u00e8le aux saveurs authentiques. Les sauces soja chinoises ou occidentales modifient le profil de go\u00fbt et le rendent moins authentique.<\/li>\n\n\n\n<li><strong>Miel<\/strong> \u2013 \u00e9vite d\u2019utiliser le miel \u00e0 la place du sucre, car son go\u00fbt floral particulier change la saveur du jeyuk bokkeum.
