Fabriqu\u00e9 \u00e0 partir de riz gluant \u00e0 grains courts, le mochiko est moulu en une fine poudre et a une texture lisse. C\u2019est souvent le choix pr\u00e9f\u00e9r\u00e9 pour les friandises japonaises traditionnelles comme le mochi et le dango.<\/li>\n\n\n\n<li><strong>Shiratamako <\/strong>: c\u2019est un autre type de farine de riz gluant utilis\u00e9 dans la cuisine japonaise, notamment pour la fabrication de <a href=\"https:\/\/fr.wikipedia.org\/wiki\/Wagashi\">wagashi<\/a> (les confiseries japonaises traditionnelles). Bien remuer jusqu&rsquo;\u00e0 ce que tout soit homog\u00e8ne, puis couvrir avec du film alimentaire.<\/li>\n\n\n\n<li>Chauffer au micro-ondes pendant 2 minutes \u00e0 puissance maximale (900 W). Remuer la p\u00e2te avec une spatule, recouvrir \u00e0 nouveau et chauffer \u00e0 nouveau pendant 2 minutes suppl\u00e9mentaires. La p\u00e2te ne doit plus \u00eatre humide. Laisser refroidir un peu.<\/li>\n\n\n\n<li>Une fois que la p\u00e2te est suffisamment refroidie pour \u00eatre manipul\u00e9e, ajouter l&rsquo;huile et p\u00e9trir jusqu&rsquo;\u00e0 obtenir une texture lisse et \u00e9lastique.<\/li>\n\n\n\n<li>Transf\u00e9rer la p\u00e2te \u00e0 mochi sur un plan de travail propre.<\/li>\n\n\n\n<li>Rouler la p\u00e2te en un long boudin, le saupoudrer de f\u00e9cule de ma\u00efs et le diviser en 14 parts \u00e9gales.<\/li>\n\n\n\n<li>Prendre un morceau de p\u00e2te, saupoudrer la partie plate &lsquo;coup\u00e9e&rsquo; de f\u00e9cule de ma\u00efs pour \u00e9viter qu&rsquo;elle ne colle.
