Il a une saveur douce et les grains ne collent pas trop, ce qui le rend tr\u00e8s polyvalent et simple \u00e0 cuisiner pour quasiment tous les repas.<\/li>\n\n\n\n<li><strong>Le riz jasmin<\/strong> a un ar\u00f4me floral d\u00e9licat et une texture l\u00e9g\u00e8rement collante, id\u00e9ale pour les plats tha\u00eflandais et d&rsquo;Asie du Sud-Est. Il prend plus de temps \u00e0 cuire, mais c\u2019est un choix id\u00e9al pour les bols de riz ou les salades.<\/li>\n\n\n\n<li><strong>Le riz sauvage<\/strong> est techniquement une c\u00e9r\u00e9ale, mais sa texture et son go\u00fbt terreux en font un excellent ajout aux salades ou un bon compl\u00e9ment \u00e0 d\u2019autres types de riz pour enrichir les saveurs.<\/li>\n\n\n\n<li><strong>Le riz noir<\/strong> a une texture tendre et une saveur profonde, presque de noisette. Sa couleur violet fonc\u00e9 apporte une touche de couleur et une bonne dose d\u2019antioxydants \u00e0 tes plats. Il est \u00e9galement souvent utilis\u00e9 dans les desserts asiatiques.<\/li>\n\n\n\n<li><strong>Le riz arborio<\/strong> est le choix parfait pour les plats comme le risotto. Ce riz \u00e0 grains courts lib\u00e8re beaucoup d\u2019amidon pendant la cuisson, ce qui donne une consistance cr\u00e9meuse id\u00e9ale.<\/li>\n\n\n\n<li><strong>Le riz rouge<\/strong> a une texture ferme et une saveur proche de la noisette, similaire au riz brun, mais avec une touche terreuse et l\u00e9g\u00e8rement sucr\u00e9e. Il est parfait pour les salades ou en accompagnement si tu cherches \u00e0 ajouter un peu de couleur et de saveur \u00e0 ton assiette.<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h3 class=\"wp-block-heading\">Quel riz mangent les Cor\u00e9ens ?<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">En Cor\u00e9e, on mange principalement du riz blanc \u00e0 grains courts, appel\u00e9 <em>baekmi <\/em>(\ubc31\ubbf8). C\u2019est un riz moelleux qui accompagne tr\u00e8s bien la plupart des plats.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Personnellement, quand je cuisine cor\u00e9en, j\u2019utilise souvent du riz noir cor\u00e9en (<em>heukmi <\/em>&#8211; \ud751\ubbf8). En Cor\u00e9e, on le m\u00e9lange souvent avec du riz blanc \u00e0 grains courts pour faire du <em>heukmi bap<\/em> (\ud751\ubbf8\ubc25).<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Les Cor\u00e9ens aiment aussi m\u00e9langer leur riz blanc avec du riz multigrains, ou \uc7a1\uace1\ubc25 (<em>japgokbap<\/em>). Ce m\u00e9lange varie, mais les c\u00e9r\u00e9ales les plus courantes dans le japgokbap sont :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Riz blanc \u00e0 grains courts<\/strong> (\ubc31\ubbf8, baekmi) : souvent la base principale, il ajoute de la douceur et une texture famili\u00e8re.<\/li>\n\n\n\n<li><strong>Riz brun<\/strong> (\ud604\ubbf8, hyeonmi) : qui donne une saveur un peu noisette et ajoute des fibres.<\/li>\n\n\n\n<li><strong>Riz noir<\/strong> (\ud751\ubbf8, heukmi) : il apporte cette jolie teinte violette apr\u00e8s cuisson et des nutriments suppl\u00e9mentaires.<\/li>\n\n\n\n<li><strong>Millet<\/strong> (\uc870, jo ou \uae30\uc7a5, gijeong) : ce petit grain jaune ajoute un peu de moelleux.<\/li>\n\n\n\n<li><strong>Sorgho<\/strong> (\uc218\uc218, susu) : il apporte une l\u00e9g\u00e8re douceur et une texture un peu moelleuse.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Certains ajoutent aussi des <strong>haricots rouges<\/strong> (\ud325, pat), des <strong>haricots adzuki<\/strong> (\uc218\uc218\ud325, susu pat), ou du <strong>soja <\/strong>(\ucf69, kong) pour plus de prot\u00e9ines et de saveur.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ma m\u00e8re cor\u00e9enne, par exemple, avait l\u2019habitude de m\u00e9langer le riz blanc avec du riz noir pour obtenir ce riz violet dont je parlais plus t\u00f4t. Aujourd\u2019hui, elle y ajoute plut\u00f4t des <strong>haricots noirs<\/strong> (\uac80\uc740\ucf69, <em>geomeun kong<\/em>) &#8211; voir photo ci-dessous. Elle les adore pour leurs bienfaits nutritionnels : ils sont riches en prot\u00e9ines, fibres et antioxydants, bons pour la digestion, le c\u0153ur, et la sant\u00e9 en g\u00e9n\u00e9ral. Beaucoup de <a href=\"https:\/\/amzn.to\/3Uuftu8\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">cuiseurs \u00e0 riz<\/a> sont livr\u00e9s avec leur propre tasse \u00e0 mesurer, qui est souvent un peu plus petite qu\u2019une tasse standard (environ 180 ml en g\u00e9n\u00e9ral). Si tu utilises un cuiseur \u00e0 riz, sers-toi de cette tasse pour garantir le bon rapport eau\/riz.<\/p>\n\n\n\n<div class=\"wp-block-group has-theme-palette-2-background-color has-background\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<p class=\"has-text-align-center wp-block-paragraph\"><strong>1 tasse de cuiseur \u00e0 riz \u2248 150 g de riz<\/strong><\/p>\n<\/div><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">Tasses \u00e0 mesurer <\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Les <a href=\"https:\/\/amzn.to\/4hqhnWG\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">tasses \u00e0 mesurer classiques<\/a> (vendues en lot avec des graduations en 1\/4 tasse, 1\/3 tasse, 1\/2 tasse, et 1 tasse) peuvent aussi \u00eatre tr\u00e8s pratiques pour mesurer ton riz. Principalement utilis\u00e9es dans certains pays anglophones, elles sont si pratiques que je les ai adopt\u00e9es depuis des ann\u00e9es. Pour tous les plats qui ne demandent pas une pr\u00e9cision au gramme pr\u00e8s, comme en p\u00e2tisserie, je les trouve bien plus pratiques qu&rsquo;une balance.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Balance<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Pour une pr\u00e9cision encore meilleure, surtout pour les grosses quantit\u00e9s, une <strong>balance de cuisine num\u00e9rique<\/strong> peut \u00eatre super utile. <\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Petits r\u00e9cipients<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Sinon, tu peux aussi utiliser <strong>n\u2019importe quel petit r\u00e9cipient<\/strong> ou bol que tu as sous la main, du moment que tu connais son volume.<\/p>\n\n\n\n<figure class=\"wp-block-pullquote\" style=\"padding-top:0;padding-right:0;padding-bottom:0\"><blockquote><p>L&rsquo;important, c&rsquo;est de toujours utiliser la m\u00eame m\u00e9thode pour mesurer le riz et l&rsquo;eau afin de garder les bons ratios!<\/p><\/blockquote><\/figure>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">Laver ou ne pas laver le riz ?<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Et bien, \u00e7a d\u00e9pend ! <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u00c7a d\u00e9pend du type de riz que tu utilises, si tu veux \u00e9liminer l&rsquo;exc\u00e8s d&rsquo;amidon, et si tu trouves que ton riz est suffisamment propre.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Quand ne pas laver le riz<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Par exemple, pour des plats comme le <strong>risotto <\/strong>ou la <strong>paella<\/strong>, il vaut mieux ne pas laver le riz. Ici, l&rsquo;exc\u00e8s d&rsquo;amidon est essentiel pour obtenir la texture cr\u00e9meuse du risotto ou pour que les grains collent bien dans la paella.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Quand laver le riz<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Pour tous les autres types de riz, surtout si tu veux des grains bien moelleux et s\u00e9par\u00e9s, OUI, il faut laver le riz ! Le rin\u00e7age est une \u00e9tape courante dans les cuisines asiatiques. Il permet de :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>R\u00e9duire l&rsquo;exc\u00e8s d&rsquo;amidon<\/strong> : en rin\u00e7ant, tu enl\u00e8ves l&rsquo;amidon de surface, ce qui emp\u00eache le riz de devenir trop collant et de s\u2019agglom\u00e9rer de trop pendant la cuisson.<\/li>\n\n\n\n<li><strong>Am\u00e9liorer la texture<\/strong> : le riz lav\u00e9 a g\u00e9n\u00e9ralement une texture plus l\u00e9g\u00e8re, id\u00e9ale pour les vari\u00e9t\u00e9s \u00e0 grains longs comme le jasmin ou le basmati.<\/li>\n\n\n\n<li><strong>Nettoyer<\/strong> : le rin\u00e7age enl\u00e8ve poussi\u00e8re, d\u00e9bris, et potentiels contaminants pr\u00e9sents lors du traitement et de l\u2019emballage.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Certaines personnes disent qu&rsquo;il n&rsquo;est pas n\u00e9cessaire de laver le riz \u00e0 moins qu&rsquo;il ne soit sale. Certes, le riz du supermarch\u00e9 est souvent bien propre, mais le rin\u00e7age \u00e9limine tout de m\u00eame les \u00e9ventuels r\u00e9sidus de sodium ou conservateurs.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pour la plupart des <strong>riz asiatiques<\/strong>, si tu ne les rinces pas, tu risques d\u2019obtenir une texture un peu p\u00e2teuse et collante au fond de la casserole. Et pour le <strong>riz \u00e0 sushi<\/strong>, le rin\u00e7age est indispensable pour obtenir des grains bien s\u00e9par\u00e9s !<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pour le <strong>riz basmati<\/strong>, comme me le disait mon ami chef cuisinier : \u00ab\u00a0<em>Si tu ne le rinces pas, tu auras un riz plus \u00e9pais et plus collant quasiment comme de la p\u00e2te de dentifrice !<\/em>\u00ab\u00a0<\/p>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">Comment laver le riz?<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Pour laver le riz, verse-le dans un bol (ou directement dans la cuve de ton cuiseur \u00e0 riz si tu en utilises un) et recouvre-le d\u2019eau. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Remue doucement le riz avec ta main, en frottant l\u00e9g\u00e8rement les grains pour aider \u00e0 \u00e9liminer l\u2019exc\u00e8s d\u2019amidon, la poussi\u00e8re ou les petits d\u00e9bris. L\u2019eau deviendra vite trouble, c\u2019est simplement l\u2019amidon de surface qui se d\u00e9tache. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Vide l\u2019eau, remplis \u00e0 nouveau, et r\u00e9p\u00e8te l\u2019op\u00e9ration <strong>environ 2 \u00e0 3 fois<\/strong>, jusqu\u2019\u00e0 ce que l\u2019eau soit presque claire (elle ne sera jamais totalement translucide). Apr\u00e8s une derni\u00e8re vidange, ton riz est pr\u00eat \u00e0 cuire !<\/p>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">Rapport riz\/eau<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Le bon <strong>rapport riz\/eau<\/strong> d\u00e9pend du type de riz et de la m\u00e9thode de cuisson, ce qui peut \u00eatre un peu d\u00e9routant avec tous les diff\u00e9rents types de riz! Le rin\u00e7age aide \u00e0 obtenir des grains plus tendres et bien s\u00e9par\u00e9s.<\/li>\n\n\n\n<li><strong>Utiliser le mauvais ratio d&rsquo;eau<\/strong> : trop ou trop peu d&rsquo;eau peut vraiment g\u00e2cher la texture du riz. Pour un riz parfaitement cuit, suis le ratio d&rsquo;eau sp\u00e9cifique \u00e0 ton type de riz (voir tableau ci-dessus).<\/li>\n\n\n\n<li><strong>\u00c9viter les casseroles \u00e0 parois trop fines<\/strong> (pour le riz \u00e0 la casserole) : les casseroles \u00e0 parois trop fines chauffent souvent de mani\u00e8re in\u00e9gale, ce qui rend le riz plus susceptible de br\u00fbler au fond. Pour de meilleurs r\u00e9sultats, utilise une casserole \u00e0 fond \u00e9pais.<\/li>\n\n\n\n<li><strong>Ne pas soulever le couvercle pendant la cuisson<\/strong> : chaque fois que tu soul\u00e8ves le couvercle, tu lib\u00e8res de la vapeur, ce qui perturbe la cuisson. C&rsquo;est tentant, mais essaie de ne pas jeter un \u0153il avant la fin du temps de cuisson !<\/li>\n\n\n\n<li><strong>Cuisson \u00e0 feu vif<\/strong> : le riz doit cuire \u00e0 feu doux, sans \u00e9bullition rapide. Une chaleur trop \u00e9lev\u00e9e risque de le cuire de mani\u00e8re in\u00e9gale ou de br\u00fbler le fond de la casserole.<\/li>\n\n\n\n<li><strong>Sauter le temps de repos<\/strong> : laisse reposer le riz, couvert, pendant environ 5 \u00e0 10 minutes apr\u00e8s la cuisson. Cela permet \u00e0 l&rsquo;humidit\u00e9 de bien se r\u00e9partir, rend le riz plus moelleux et permet de bien r\u00e9partir la chaleur.<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">Comment conserver, congeler et r\u00e9chauffer le riz ?<\/h2>\n\n\n\n<h3 class=\"wp-block-heading\">Conservation du riz cuit<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Conserve les restes de riz dans un r\u00e9cipient herm\u00e9tique au r\u00e9frig\u00e9rateur <strong>dans les deux heures suivant la cuisson<\/strong>, pour \u00e9viter la prolif\u00e9ration bact\u00e9rienne. Le riz se conserve bien au r\u00e9frig\u00e9rateur pendant <strong>4 \u00e0 6 jours<\/strong>.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Cong\u00e9lation du riz cuit<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Divise le riz en portions individuelles, puis \u00e9tale-le sur une plaque pour qu&rsquo;il refroidisse rapidement. Une fois froid, transf\u00e8re les portions dans des sacs ou des r\u00e9cipients de cong\u00e9lation, en retirant autant d&rsquo;air que possible. Le riz se conserve jusqu&rsquo;\u00e0 <strong>1 \u00e0 2 mois <\/strong>au cong\u00e9lateur.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">R\u00e9chauffer le riz<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Micro-ondes<\/strong> : place le riz dans un bol, ajoute un peu d&rsquo;eau et couvre-le avec un couvercle ou une serviette en papier humide. R\u00e9chauffe \u00e0 puissance \u00e9lev\u00e9e par intervalles d&rsquo;1 minute, en remuant de temps en temps, jusqu&rsquo;\u00e0 ce qu&rsquo;il soit bien chaud (1 \u00e0 2 minutes suffisent g\u00e9n\u00e9ralement pour une seule portion).<\/li>\n\n\n\n<li><strong>A la casserole<\/strong>: ajoute un peu d&rsquo;eau dans une casserole avec le riz, couvre et chauffe \u00e0 feu doux, en
