Utilise tes restes de riz, ajoute du jambon, des carottes, des petits pois, un peu de ma\u00efs, de l&rsquo;oignon et des oignons frits, puis fais revenir le tout dans une sauce bien savoureuse. Mmmm, c\u2019est tentant\u2026 mais je n\u2019ai pas vraiment envie de sortir. Et si on restait \u00e0 la maison et qu\u2019on pr\u00e9parait un riz saut\u00e9 rapide avec les restes de riz d\u2019hier ?!<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">J\u2019adore le riz saut\u00e9! J\u2019en ai envie de temps en temps, mais comme je suis un peu difficile en ce qui concerne le riz, je suis souvent d\u00e9\u00e7ue par celui de certains restaurants. Il est soit trop sec, trop sal\u00e9, ou tout simplement pas assez savoureux. Alors, quand je trouve un restaurant qui le fait bien, c\u2019est un pur bonheur ! \ud83d\ude0aSi tu aimes le riz saut\u00e9 autant que moi, tu vas aussi adorer mon <a href=\"https:\/\/www.thatcutedish.com\/fr\/riz-saute-au-saumon\/\">riz saut\u00e9 au saumon<\/a> ou mon <a href=\"https:\/\/www.thatcutedish.com\/fr\/riz-saute-au-kimchi\/\">riz saut\u00e9 au kimchi<\/a>.<\/p>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">Qu&rsquo;est-ce que le riz cantonais?<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Le <strong>riz cantonais<\/strong>, c&rsquo;est un classique de la <strong>cuisine chinoise<\/strong> que tout le monde adore ! Originaire de la r\u00e9gion de <strong>Canton<\/strong>, ce plat est super simple et rapide \u00e0 pr\u00e9parer.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Il se compose principalement de riz saut\u00e9, souvent du riz blanc cuit la veille, ce qui permet d&rsquo;avoir des grains bien s\u00e9par\u00e9s et non collants. On y ajoute des ingr\u00e9dients comme des \u0153ufs brouill\u00e9s, des petits pois, des carottes et parfois du jambon, du poulet ou des crevettes. Chaque famille a sa propre version, et c&rsquo;est ce qui rend ce plat si sp\u00e9cial !<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ce qui est g\u00e9nial avec le riz cantonais, c&rsquo;est qu&rsquo;il se partage facilement et que chacun peut l&rsquo;adapter \u00e0 ses go\u00fbts. Un peu de sauce soja, une touche d&rsquo;huile de s\u00e9same, et voil\u00e0, tu as un plat savoureux en un rien de temps ! <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Que ce soit pour un repas rapide en semaine ou pour impressionner des amis lors d&rsquo;un d\u00eener, le riz cantonais est toujours un succ\u00e8s. C\u2019est un plat r\u00e9confortant qui met tout le monde d\u2019accord, alors n\u2019h\u00e9site pas \u00e0 le pr\u00e9parer et \u00e0 le savourer en bonne compagnie !<\/p>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">Ingr\u00e9dients<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>riz<\/strong>: le riz doit \u00eatre bien r\u00e9frig\u00e9r\u00e9, sinon il finira p\u00e2teux apr\u00e8s avoir \u00e9t\u00e9 saut\u00e9.<\/li>\n\n\n\n<li><strong>\u0153ufs<\/strong> : assaisonne les \u0153ufs avec du poivre noir et une pinc\u00e9e de sauce soja (au lieu du sel).<\/li>\n\n\n\n<li><strong>oignon<\/strong> : pour cette recette, j\u2019utilise de l\u2019oignon. Tu peux aussi remplacer par des oignons jeunes ou utiliser les deux. Si tu choisis cette option, je te conseille de sauter les oignons frits pour \u00e9viter de te retrouver avec un \u00ab\u00a0riz saut\u00e9 \u00e0 l&rsquo;oignon\u00a0\u00bb au lieu d&rsquo;un riz cantonais.<\/li>\n\n\n\n<li><strong>carotte<\/strong> : coupe la carotte en tr\u00e8s petits d\u00e9s (environ 0,5 cm). Garde les morceaux de la taille de petits pois, de jambon et de ma\u00efs pour que tout se m\u00e9lange en parfaite harmonie.<\/li>\n\n\n\n<li><strong>ail<\/strong> : hache ou \u00e9crase l&rsquo;ail.<\/li>\n\n\n\n<li><strong>jambon<\/strong> : ach\u00e8te du jambon d\u00e9j\u00e0 coup\u00e9 ou coupe un gros morceau en tr\u00e8s petits cubes (environ 0,5 cm).<\/li>\n\n\n\n<li><strong>petits pois surgel\u00e9s<\/strong> : ils sont parfaits pour le riz saut\u00e9, contrairement aux petits pois en conserve qui deviennent souvent trop mous.<\/li>\n\n\n\n<li><strong>ma\u00efs<\/strong> : c&rsquo;est un incontournable pour le riz frit cantonais ! Le ma\u00efs en conserve ou surgel\u00e9 fonctionne tr\u00e8s bien.<\/li>\n\n\n\n<li><strong>oignons frits<\/strong> : ils sont facultatifs, mais j&rsquo;adore le croquant qu&rsquo;ils ajoutent si tu les m\u00e9langes juste avant de servir.<\/li>\n\n\n\n<li><strong>sriracha (pour servir)<\/strong> : un autre ingr\u00e9dient facultatif, mais il apporte une touche piquante incroyable. Je ne mange jamais de riz cantonais sans sriracha, sauf si le restaurant n&rsquo;en a pas. Pour moi, c&rsquo;est la diff\u00e9rence entre le \u00ab\u00a0riz saut\u00e9\u00a0\u00bb et le RIZ SAUTE! Mais si tu n\u2019aimes pas le piquant, pas de souci, tu peux l\u2019ignorer.<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h3 class=\"wp-block-heading\">sauce<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>vin Shaoxing ou mirin<\/strong> : essaie-le avec et sans, et tu verras la diff\u00e9rence.<\/li>\n\n\n\n<li><strong>sauce aux hu\u00eetres<\/strong> : \u00e0 ne surtout pas oublier dans le riz cantonais !<\/li>\n\n\n\n<li><strong>sauce soja l\u00e9g\u00e8re<\/strong> : assure-toi de ne pas utiliser de sauce soja fonc\u00e9e, car cela rendra ton plat beaucoup trop sal\u00e9. <\/li>\n\n\n\n<li><strong>huile de s\u00e9same<\/strong> : elle donne toujours une belle saveur au riz saut\u00e9.<\/li>\n\n\n\n<li><strong>poudre de poivre noir<\/strong> : je pr\u00e9f\u00e8re utiliser de la poudre de poivre noir pour assaisonner ma sauce, car elle se m\u00e9lange mieux que le poivre noir ordinaire.<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">Quel wok ou po\u00eale utiliser?<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Un <a href=\"https:\/\/amzn.to\/3df4mzr\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">wok en acier<\/a> au carbone est le choix traditionnel, mais si tu n\u2019en as pas, un wok antiadh\u00e9sif fait aussi tr\u00e8s bien l\u2019affaire. Une po\u00eale en fonte donne \u00e9galement un r\u00e9sultat similaire \u00e0 un wok en acier au carbone. Ou utilise simplement n\u2019importe quelle grande po\u00eale que tu as sous la main.<\/p>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">Pr\u00e9paration<\/h2>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<div class=\"wp-block-group is-vertical is-layout-flex wp-container-core-group-is-layout-4fc3f8e1 wp-block-group-is-layout-flex\">\n<ol class=\"wp-block-list\">\n<li><strong>Pr\u00e9parer le riz<\/strong>&nbsp;\u2013 Cuire le riz (voici mon <a href=\"https:\/\/www.thatcutedish.com\/fr\/comment-cuire-du-riz\/\">guide<\/a> pour une cuisson parfaite du riz).<\/li>\n\n\n\n<li>R\u00e9frig\u00e9rer le riz pendant une demi-journ\u00e9e minimum ou, encore mieux, toute une nuit. Le riz froid est essentiel pour \u00e9viter qu\u2019il devienne p\u00e2teux \u00e0 la cuisson.<\/li>\n\n\n\n<li><strong>Pr\u00e9parer les ingr\u00e9dients et la sauce<\/strong>&nbsp;\u2013 Couper l\u2019oignon et la carotte en petits morceaux.<\/li>\n\n\n\n<li>Battre les \u0153ufs avec une pinc\u00e9e de poivre noir et un filet de sauce soja.<\/li>\n\n\n\n<li>M\u00e9langer tous les ingr\u00e9dients de la sauce dans un bol s\u00e9par\u00e9.<\/li>\n\n\n\n<li><strong>Assembler le riz saut\u00e9<\/strong>&nbsp;\u2013 Chauffer 1 c. \u00e0 s. d\u2019huile dans un wok \u00e0 feu moyen-vif. Ajouter l\u2019oignon et l\u2019ail \u00e9minc\u00e9, et faire revenir 30 secondes.<\/li>\n\n\n\n<li>Ajouter les d\u00e9s de carotte et de jambon, puis cuire encore 30 secondes.<\/li>\n\n\n\n<li>D\u00e9placer les ingr\u00e9dients sur le c\u00f4t\u00e9 du wok, ajouter la deuxi\u00e8me c. \u00e0 s. d\u2019huile, puis verser les \u0153ufs battus. Faire revenir 30 secondes, jusqu\u2019\u00e0 ce que les petits pois soient d\u00e9congel\u00e9s.<\/li>\n\n\n\n<li>Ajouter le riz froid et bien m\u00e9langer avec les l\u00e9gumes. Verser la moiti\u00e9 de la sauce et faire revenir 30 secondes. Savoure-le en <strong>plat principal <\/strong>ou comme <strong>accompagnement <\/strong>de viande, de poisson, de tofu, ou avec tout ce que tu aimes. <\/p>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">Conservation<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Pour conserver le riz cantonais, il est important de le <strong>laisser refroidir \u00e0 temp\u00e9rature ambiante <\/strong>pendant environ 30 minutes apr\u00e8s la cuisson. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ensuite, place-le dans un r\u00e9cipient herm\u00e9tique et range-le au r\u00e9frig\u00e9rateur. Il peut se conserver <strong>jusqu&rsquo;\u00e0 3 \u00e0 4 jours<\/strong>. Lorsque tu souhaites le r\u00e9chauffer, utilise une po\u00eale \u00e0 feu moyen ou un micro-ondes, en ajoutant un peu d&rsquo;eau ou d&rsquo;huile pour \u00e9viter qu&rsquo;il ne devienne trop sec. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Si tu as pr\u00e9par\u00e9 une grande quantit\u00e9 et que tu veux le conserver plus longtemps, tu peux aussi le <strong>congeler en portions<\/strong>. Dans ce cas, assure-toi de bien le placer dans des sacs de cong\u00e9lation ou des contenants adapt\u00e9s, et consomme-le dans les <strong>2 \u00e0 3 mois<\/strong> pour profiter au mieux de sa saveur et de sa texture.<\/p>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">Les conseils d&rsquo;Emma<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Utiliser du riz r\u00e9frig\u00e9r\u00e9 <\/strong>: pr\u00e9pare le riz \u00e0 l&rsquo;avance et laisse-le refroidir au r\u00e9frig\u00e9rateur pendant au moins quelques heures, voire toute une nuit. Le riz froid est moins collant et permet d&rsquo;obtenir une texture parfaite lors du saut\u00e9.<\/li>\n\n\n\n<li><strong>Ne pas surcharger le wok<\/strong> : lorsque tu fais sauter le riz, \u00e9vite de trop remplir ton wok. Un trop grand volume peut emp\u00eacher une bonne cuisson et un bon croustillant. Si tu pr\u00e9pares une grande quantit\u00e9, fais-le en plusieurs fois.<\/li>\n\n\n\n<li><strong>Sauter \u00e0 feu vif<\/strong> : utilise un feu vif pour sauter le riz.
