Je connais les nems depuis mon enfance, gr\u00e2ce \u00e0 un vendeur vietnamien qui en vendait au march\u00e9 du samedi dans notre petite ville.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Une fois que tu auras appris la technique pour rouler les nems, tu seras \u00e9tonn\u00e9 de la rapidit\u00e9 avec laquelle tu pourras en pr\u00e9parer une grande quantit\u00e9. Les nems faits maison sont bien meilleurs que ceux achet\u00e9s en magasin. Essaie de les pr\u00e9parer et tu ne reviendras jamais en arri\u00e8re !<\/p>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">Ingr\u00e9dients<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>feuilles de riz<\/strong> &#8211; utilise des feuilles d\u2019environ 22 cm de diam\u00e8tre. Cette taille est parfaite pour des nems de taille moyenne. Note que les feuilles \u00e0 base de p\u00e2te ou d\u2019\u0153uf sont utilis\u00e9es pour les rouleaux de printemps chinois, pas pour les nems vietnamiens.<\/li>\n\n\n\n<li><strong>huile de cuisson<\/strong> &#8211; si tu utilises une friteuse, garde le panier en bas, surtout lors de la premi\u00e8re friture, car les nems peuvent coller au fond. La feuille de riz est particuli\u00e8rement collante, donc fais attention.<\/li>\n\n\n\n<li><strong>salade <\/strong>&#8211; sers les nems avec des feuilles de laitue fra\u00eeches. <\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h3 class=\"wp-block-heading\">garniture<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>hach\u00e9 de porc<\/strong> &#8211; le porc est la viande traditionnelle pour les nems vietnamiens.<\/li>\n\n\n\n<li><strong>sauce de poisson<\/strong> &#8211; c\u2019est l\u2019assaisonnement principal de la garniture, qui ajoute une vraie saveur umami.<\/li>\n\n\n\n<li><strong>vermicelles ou nouilles de verre<\/strong> &#8211; les deux fonctionnent bien. J\u2019utilise souvent des vermicelles (plus facile \u00e0 trouver) mais les nouilles de verre sont excellentes aussi. \u00c9vite les nouilles de verre cor\u00e9ennes (dangmyun) car leur texture n\u2019est pas adapt\u00e9e pour cette recette. Coupe les nouilles en petits morceaux avec des ciseaux pour bien les m\u00e9langer \u00e0 la garniture.<\/li>\n\n\n\n<li><strong>oignon<\/strong> <\/li>\n\n\n\n<li><strong>carottes<\/strong> &#8211; des carottes fra\u00eechement r\u00e2p\u00e9es sont id\u00e9ales pour cette recette, car elles ont un go\u00fbt bien plus frais que celles d\u00e9j\u00e0 vendues r\u00e2p\u00e9es.<\/li>\n\n\n\n<li><strong>champignons oreilles de bois s\u00e9ch\u00e9s<\/strong> &#8211; r\u00e9hydrate-les dans de l\u2019eau bouillante, puis hache-les finement. Ils apportent de la texture et un go\u00fbt l\u00e9g\u00e8rement terreux.<\/li>\n\n\n\n<li><strong>germes de soja<\/strong> &#8211; avec les carottes et les champignons, les germes de soja sont parmi les l\u00e9gumes les plus traditionnels pour les nems.<\/li>\n\n\n\n<li><strong>\u0153ufs<\/strong> &#8211; bats l\u00e9g\u00e8rement les \u0153ufs et m\u00e9lange-les dans la garniture pour qu\u2019elle se lie bien.<\/li>\n\n\n\n<li><strong>ail<\/strong> <\/li>\n\n\n\n<li><strong>poivre noir et sel<\/strong> <\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h3 class=\"wp-block-heading\">sauce nuoc cham<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>sucre<\/strong> <\/li>\n\n\n\n<li><strong>vinaigre blanc<\/strong> &#8211; tu peux le remplacer par du vinaigre de riz si tu pr\u00e9f\u00e8res.<\/li>\n\n\n\n<li><strong>sauce de poisson<\/strong> &#8211; l\u2019ingr\u00e9dient cl\u00e9 des sauces vietnamiennes. Ne fais pas l\u2019impasse !<\/li>\n\n\n\n<li><strong>eau<\/strong> &#8211; pour \u00e9quilibrer l\u2019intensit\u00e9 de la sauce.<\/li>\n\n\n\n<li><strong>ail<\/strong> &#8211; l\u2019ail en Belgique est assez fort, donc j\u2019utilise juste une petite gousse. Si l\u2019ail est plus doux l\u00e0 o\u00f9 tu vis, ajuste la quantit\u00e9 \u00e0 ton go\u00fbt, ou omets-le si tu n\u2019es pas fan du go\u00fbt de l\u2019ail cru.<\/li>\n\n\n\n<li><strong>petits piments rouges<\/strong> &#8211; les petits piments rouges sont plus piquants et ajoutent un coup de fouet \u00e0 la sauce.<\/li>\n\n\n\n<li><strong>jus de citron vert<\/strong> &#8211; une pinc\u00e9e de citron vert pour une note d\u2019agrumes fra\u00eeche.<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">Pr\u00e9paration<\/h2>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h3 class=\"wp-block-heading\">Pr\u00e9parer la sauce nuoc cham<\/h3>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Dans une casserole, porter \u00e0 \u00e9bullition le sucre, le vinaigre blanc, la sauce de poisson et l\u2019eau. Une fois le sucre dissous, \u00e9teindre le feu. Transf\u00e9rer la sauce dans un bol, puis ajouter l\u2019ail et les piments. Soulever le c\u00f4t\u00e9 inf\u00e9rieur de la feuille de riz et enrouler fermement autour de la garniture. Continuer \u00e0 l&rsquo;enrouler jusqu&rsquo;au bout.
