En Cor\u00e9e, le bulgogi fait g\u00e9n\u00e9ralement r\u00e9f\u00e9rence au b\u0153uf, mais ce terme est aussi utilis\u00e9 pour le porc ou le poulet, comme dans \u00ab bulgogi de porc \u00bb ou \u00ab bulgogi de poulet \u00bb. Une fois le b\u0153uf marin\u00e9, tu peux le cuire de diff\u00e9rentes fa\u00e7ons.<\/p>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h3 class=\"wp-block-heading\">Quels sont les diff\u00e9rents types de bulgogi ?<\/h3>\n\n\n\n<p>Il existe trois principaux types de bulgogi :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Le bulgogi de S\u00e9oul (\uc11c\uc6b8 \ubd88\uace0\uae30)<\/strong> \u2013 ce type de bulgogi se caract\u00e9rise par une marinade \u00e0 base de sauce soja, sucre, ail, et parfois de fruits comme la poire ou la pomme. La saveur est riche et savoureuse, et le bulgogi est souvent grill\u00e9 ou saut\u00e9.<\/li>\n\n\n\n<li><strong>Le bulgogi de Gwangyang (\uad11\uc591 \ubd88\uace0\uae30)<\/strong> \u2013 connu pour ses morceaux de b\u0153uf plus \u00e9pais, cette version met l\u2019accent sur la douceur et le go\u00fbt fum\u00e9. Il est souvent grill\u00e9 au charbon de bois, ce qui lui donne une saveur profonde et intense.<\/li>\n\n\n\n<li><strong>Eonyang Bulgogi (\uc5b8\uc591 \ubd88\uace0\uae30)<\/strong> \u2013 originaire d\u2019Eonyang, ce type de bulgogi est aussi grill\u00e9 au charbon de bois avec une marinade sp\u00e9cifique. La teneur en graisse aide \u00e0 garder la viande juteuse pendant la cuisson, ce qui en fait un choix populaire pour le bulgogi.<\/p>\n\n\n\n<p><strong>Faux filet (\ub4f1\uc2ec, deungsim)<\/strong> &#8211; le faux filet est plus maigre que l\u2019entrec\u00f4te, mais reste tendre. Il a une texture l\u00e9g\u00e8rement plus ferme tout en gardant sa saveur, id\u00e9ale pour la marinade et la cuisson rapide.<\/p>\n<\/div><\/div>\n\n\n\n<p><\/p>\n\n\n\n<p>Personnellement, je pr\u00e9f\u00e8re utiliser de l\u2019entrec\u00f4te car elle est plus grasse. Tu peux acheter de la viande pr\u00e9-tranch\u00e9e dans une \u00e9picerie cor\u00e9enne ou demander \u00e0 ton boucher de la trancher tr\u00e8s finement. C\u2019est aussi un ingr\u00e9dient traditionnel dans la cuisine cor\u00e9enne.<\/p>\n\n\n\n<p>Mais si tu ne trouves pas de poire nashi, voici quelques substituts :<\/p>\n\n\n\n<p><strong>Kiwi<\/strong> &#8211; le kiwi contient une enzyme appel\u00e9e actinidine, un puissant attendrisseur naturel pour la viande. <strong>Attention \u00e0 ne pas mariner la viande plus d&rsquo;une heure avec le kiwi<\/strong>, sinon la viande risque de devenir trop molle.<\/p>\n\n\n\n<p><strong>Poire ordinaire<\/strong> \u2013 tu peux l\u2019utiliser \u00e0 la place de la poire nashi. Bien qu\u2019elle ne contienne pas autant d\u2019enzymes attendrissantes, elle apporte une douceur et de l\u2019humidit\u00e9 qui am\u00e9liorent la texture et la saveur du plat.<\/p>\n\n\n\n<p><strong>Pomme <\/strong>\u2013 les pommes sucr\u00e9es, comme les vari\u00e9t\u00e9s Gala ou Fuji, peuvent ajouter de la douceur et attendrir la viande. Elles ne sont pas aussi efficaces que le kiwi, mais elles fonctionnent bien en combinaison avec d\u2019autres attendrisseurs comme la sauce soja ou le vinaigre.<\/p>\n<\/div><\/div>\n<\/div><\/div>\n\n\n\n<p><\/p>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<p>En g\u00e9n\u00e9ral, je trouve la poire nashi dans les supermarch\u00e9s \u00e0 l\u2019automne et en hiver. Si je n\u2019en trouve pas, mon substitut pr\u00e9f\u00e9r\u00e9 est le kiwi. Mais si j\u2019ai des poires et des pommes \u00e0 la maison, je m\u00e9lange les deux pour obtenir une saveur proche de celle de la poire nashi, qui a un profil de go\u00fbt entre la poire et la pomme. En fran\u00e7ais, d\u2019ailleurs, on appelle parfois la poire nashi \u00ab\u00a0<a href=\"https:\/\/fr.wikipedia.org\/wiki\/Nashi\" target=\"_blank\" rel=\"noreferrer noopener\">pomme-poire<\/a>\u00ab\u00a0.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>sauce soja<\/strong> \u2013 si possible, utilise de la sauce soja cor\u00e9enne. Elle a un go\u00fbt plus doux et complexe que les autres sauces soja, renfor\u00e7ant l\u2019authenticit\u00e9 du bulgogi.
