Et en plus, ici, tu le trouves bien trop cher\u2026 Tu t&rsquo;es d\u00e9j\u00e0 demand\u00e9 comment faire du kimchi \u00e0 la maison ? \u00c7a te semble compliqu\u00e9 ? En fait, pas tant que \u00e7a ! Il existe plusieurs fa\u00e7ons de pr\u00e9parer le kimchi traditionnel, mais je vais te montrer la m\u00e9thode la plus rapide selon moi. En dehors du temps de saumurage, la pr\u00e9paration de ce kimchi te prendra \u00e0 peine 30 minutes.<\/p>\n\n\n\n<p>Comme \u00e7a, tu auras toujours un batch de kimchi frais dans ton frigo, pr\u00eat \u00e0 accompagner un d\u00e9licieux <a href=\"https:\/\/www.thatcutedish.com\/fr\/dolsot-bibimbap\/\">bibimbap<\/a>, ton <a href=\"https:\/\/www.thatcutedish.com\/fr\/bulgogi\/\">bulgogi<\/a><strong> <\/strong>pr\u00e9f\u00e9r\u00e9 ou m\u00eame un bon <a href=\"https:\/\/www.thatcutedish.com\/fr\/doenjang-jjigae\/\">doenjang jjigae<\/a>, comme au resto!<\/p>\n\n\n\n<p>Le kimchi ne se sert pas seulement en <a href=\"https:\/\/www.thatcutedish.com\/fr\/categorie\/type-de-plat\/accompagnements\/\">accompagnement<\/a>, tu peux aussi l\u2019utiliser en garniture, comme dans mes <a href=\"https:\/\/www.thatcutedish.com\/fr\/kimbap-plie\/\">kimbap cor\u00e9ens pli\u00e9s<\/a>, pour faire des <a href=\"https:\/\/www.thatcutedish.com\/fr\/kimchijeon\/\">kimchijeon<\/a> ultra croustillantes, ou encore pour faire un succulent <a href=\"https:\/\/www.thatcutedish.com\/fr\/riz-saute-au-kimchi\/\">riz saut\u00e9 au kimchi<\/a>. C\u2019est aussi parfait pour agr\u00e9menter ou garnir des <a href=\"https:\/\/www.thatcutedish.com\/fr\/jumeokbap\/\">jumeokbap<\/a> (boules de riz cor\u00e9ennes).<\/p>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\" id=\"what-is-kimchi\">Qu&rsquo;est-ce que le kimchi?<\/h2>\n\n\n\n<p>En cor\u00e9en, le kimchi (\uae40\uce58) d\u00e9signe tous les l\u00e9gumes saumur\u00e9s, assaisonn\u00e9s puis ferment\u00e9s. Le type de kimchi le plus r\u00e9pandu est \u00e0 base de <a href=\"https:\/\/fr.wikipedia.org\/wiki\/P%C3%A9-tsa%C3%AF\" target=\"_blank\" rel=\"noreferrer noopener\">chou chinois<\/a>, mais il existe des centaines de vari\u00e9t\u00e9s utilisant diff\u00e9rents l\u00e9gumes.<\/p>\n\n\n\n<p>Autrefois, on conservait le kimchi dans de grands pots en terre cuite enterr\u00e9s pour fermenter jusqu\u2019au printemps, comme tu peux le voir dans certains dramas cor\u00e9ens (par exemple <em>Crash Landing on You<\/em>, l&rsquo;un de mes dramas pr\u00e9f\u00e9r\u00e9s). De nos jours, tu peux acheter des r\u00e9cipients herm\u00e9tiques sp\u00e9cialement con\u00e7us pour fermenter le kimchi tout en \u00e9vitant que l\u2019odeur ne se r\u00e9pande dans ton frigo.<\/p>\n\n\n\n<p>Le kimchi au chou chinois se pr\u00e9pare en saumurant le chou avec du gros sel de mer, puis en l&rsquo;assaisonnant avec du radis cor\u00e9en et une p\u00e2te de piment. Ensuite, on le laisse fermenter 2 jours \u00e0 temp\u00e9rature ambiante et 2 semaines au r\u00e9frig\u00e9rateur.<\/p>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">Quel go\u00fbt a le kimchi?<\/h2>\n\n\n\n<p>Le kimchi a un go\u00fbt complexe qui combine plusieurs saveurs : il est \u00e0 la fois <strong>piquant<\/strong>, <strong>sal\u00e9<\/strong>, <strong>acidul\u00e9 <\/strong>avec une note d&rsquo;<strong>umami<\/strong>. L&rsquo;acidit\u00e9 vient du processus de fermentation, qui lui donne une saveur piquante, tandis que les flocons de piment cor\u00e9en (gochugaru) apportent une chaleur mod\u00e9r\u00e9e ou plus intense selon la quantit\u00e9 utilis\u00e9e. La sauce aux anchois et les crevettes sal\u00e9es ajoutent une profondeur umami, et l&rsquo;ail et le gingembre donnent des notes aromatiques. Plus le kimchi fermente longtemps, plus son go\u00fbt devient prononc\u00e9 et acidul\u00e9.<\/p>\n\n\n\n<p><strong>Et si tu n&rsquo;aimes pas le piquant?<\/strong> Tu peux tout \u00e0 fait ajuster la quantit\u00e9 de gochugaru dans ta recette de kimchi. Il existe m\u00eame des versions de kimchi sans piment, comme le \u00ab\u00a0baek kimchi\u00a0\u00bb (kimchi blanc), qui est doux et plus ax\u00e9 sur les saveurs sal\u00e9es et umami, sans le piquant. Si tu aimes le kimchi jeune, tu peux le manger tout de suite, mais les saveurs seront pleinement d\u00e9velopp\u00e9es apr\u00e8s 2 semaines. Ensuite, plus il vieillit, plus il devient acide. Si tu trouves ton kimchi trop acide pour certains plats, ajoute un peu de sucre pour \u00e9quilibrer.
