Tu le trouveras s\u00fbrement dans tous les restos cor\u00e9ens \u00e0 l&rsquo;\u00e9tranger. \u00ab\u00a0Dolsot\u00a0\u00bb fait r\u00e9f\u00e9rence au bol en pierre, tandis que \u00ab\u00a0bibim\u00a0\u00bb signifie m\u00e9langer divers ingr\u00e9dients. \u00ab\u00a0Bap\u00a0\u00bb veut dire riz, donc litt\u00e9ralement, c\u2019est du \u00ab\u00a0<strong>riz m\u00e9lang\u00e9<\/strong>\u00ab\u00a0.<\/p>\n\n\n\n<p>Le plus souvent, le riz est m\u00e9lang\u00e9 avec du <strong>b\u0153uf marin\u00e9 <\/strong>(un peu comme du <a href=\"https:\/\/www.thatcutedish.com\/fr\/bulgogi\/\">bulgogi<\/a>), des <strong>l\u00e9gumes assaisonn\u00e9s et saut\u00e9s<\/strong>, et un \u0153uf pos\u00e9 sur le dessus qui compl\u00e8te l\u2019apparence du plat. Il est servi avec une <strong>sauce \u00e0 base de gochujang<\/strong> (p\u00e2te de piment rouge cor\u00e9en) que tu ajoutes selon tes go\u00fbts. Perso, j&rsquo;adore quand c\u2019est bien piquant, donc la plupart du temps, quand je mange au resto, je finis la moiti\u00e9 de la bouteille de sauce gochujang ! \ud83d\ude02<\/p>\n\n\n\n<p>Il existe aussi plein de variantes, comme l&rsquo;un de mes pr\u00e9f\u00e9r\u00e9s, l&rsquo;albap, qui est un bibimbap avec des \u0153ufs de poisson frais. L&rsquo;avantage avec ce plat, c&rsquo;est que tu peux le personnaliser comme tu veux, autant sur la quantit\u00e9 que sur les ingr\u00e9dients (parfait pour recycler les restes qui tra\u00eenent dans ton frigo !).<\/p>\n\n\n\n<p>Une des th\u00e9ories sur l&rsquo;origine du bibimbap, c\u2019est qu&rsquo;il \u00e9tait pr\u00e9par\u00e9 la veille du Nouvel An lunaire pour finir tous les restes du frigo avant de commencer la nouvelle ann\u00e9e.<\/p>\n\n\n\n<p>Le bibimbap est un plat assez <strong>simple et peu co\u00fbteux<\/strong> \u00e0 pr\u00e9parer. La seule petite contrainte, c&rsquo;est le temps de pr\u00e9paration, car chaque ingr\u00e9dient doit \u00eatre assaisonn\u00e9 et saut\u00e9 s\u00e9par\u00e9ment. Mais honn\u00eatement, si tu as un peu de temps \u00e0 consacrer \u00e0 ton d\u00eener, fonce et essaie-le \u00e0 la maison !<\/p>\n\n\n\n<p>La bonne nouvelle, c&rsquo;est qu&rsquo;en pr\u00e9parant les ingr\u00e9dients en plus grande quantit\u00e9, tu peux facilement les conserver au r\u00e9frig\u00e9rateur pendant un jour ou deux. Et le lendemain, tu auras tout termin\u00e9 en \u00e0 peine 10 minutes !<\/p>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">Diff\u00e9rence entre bibimbap and dolsot bibimbap?<\/h2>\n\n\n\n<p>La diff\u00e9rence principale entre le bibimbap et le dolsot bibimbap r\u00e9side dans la mani\u00e8re dont ils sont servis et pr\u00e9par\u00e9s.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Le bibimbap<\/strong> est un plat de riz m\u00e9lang\u00e9 avec des l\u00e9gumes assaisonn\u00e9s, souvent de la viande (comme du b\u0153uf marin\u00e9) et un \u0153uf, le tout servi dans un bol classique. Le riz reste moelleux, et les ingr\u00e9dients sont m\u00e9lang\u00e9s avant d&rsquo;\u00eatre d\u00e9gust\u00e9s, g\u00e9n\u00e9ralement avec de la sauce gochujang.<\/li>\n\n\n\n<li><strong>Le dolsot bibimbap<\/strong>, quant \u00e0 lui, est servi dans un <a href=\"http:\/\/amzn.to\/3IhQLWc\">bol en pierre<\/a> chauff\u00e9 (appel\u00e9 \u00ab\u00a0dolsot\u00a0\u00bb), ce qui permet au riz de continuer \u00e0 cuire une fois servi. Mais si, comme moi, tu adores ce plat, je te conseille de t&rsquo;en procurer. C\u2019est vraiment le secret pour obtenir cette couche de riz bien croustillante au fond, qui rend le bibimbap encore plus irr\u00e9sistible. Et en plus, tu pourras l\u2019utiliser pour d\u2019autres plats cor\u00e9ens authentiques, comme le <a href=\"https:\/\/www.thatcutedish.com\/fr\/doenjang-jjigae\/\">doenjang jjigae<\/a> !<\/p>\n\n\n\n<p><strong>Si tu n\u2019as pas de bol en pierre<\/strong>, pas de panique. Un bon substitut, c\u2019est la <a href=\"https:\/\/amzn.to\/31xHDfD\">po\u00eale en fonte<\/a>. Elle est \u00e0 peu pr\u00e8s au m\u00eame prix et, qui sait, tu en as peut-\u00eatre d\u00e9j\u00e0 une dans tes placards. Le riz \u00e0 grains courts est pr\u00e9f\u00e9r\u00e9 pour le bibimbap car sa texture collante permet une meilleure adh\u00e9rence des ingr\u00e9dients, rendant le m\u00e9lange plus savoureux. Pour une cuisson parfaite du riz, selon diff\u00e9rentes m\u00e9thodes, voici mon <a href=\"https:\/\/www.thatcutedish.com\/fr\/comment-cuire-du-riz\/\">guide<\/a>.<\/li>\n\n\n\n<li><strong>boeuf <\/strong>&#8211; il est super important de choisir le bon morceau. De l&rsquo;entrec\u00f4te est id\u00e9ale, car elle est grasse et reste bien juteuse, pas s\u00e8che<\/li>\n\n\n\n<li><strong>champignons shiitake s\u00e9ch\u00e9s&nbsp;<\/strong>&#8211; tu peux aussi utiliser des champignons shiitake frais<\/li>\n\n\n\n<li><strong>carottes&nbsp;<\/strong>&#8211; coupe-les en julienne pour qu&rsquo;elles se m\u00e9langent bien aux autres ingr\u00e9dients<\/li>\n\n\n\n<li><strong>courgette<\/strong>&nbsp;&#8211; coupe-la en julienne pour qu&rsquo;elle se m\u00e9lange bien aux autres ingr\u00e9dients<\/li>\n\n\n\n<li><strong>\u00e9pinards frais<\/strong> &#8211; n\u2019utilise surtout pas d\u2019\u00e9pinards surgel\u00e9s, ils se transforment en pur\u00e9e et ne se m\u00e9langeront pas bien avec le reste<\/li>\n\n\n\n<li><strong>germes de soja<\/strong><\/li>\n\n\n\n<li><strong>ail<\/strong> &#8211; presse l&rsquo;ail avec un presse-ail pour en extraire plus de jus et \u00e9viter d\u2019avoir de gros morceaux dans les l\u00e9gumes<\/li>\n\n\n\n<li><strong>huile de s\u00e9same<\/strong>&nbsp;&#8211; ne sois pas timide avec l\u2019huile de s\u00e9same, c\u2019est elle qui donne beaucoup de go\u00fbt \u00e0 tous les l\u00e9gumes saut\u00e9s <\/li>\n\n\n\n<li><strong>sauce soja<\/strong><\/li>\n\n\n\n<li><strong>jaunes d&rsquo;\u0153ufs<\/strong> &#8211; tu peux cuire un \u0153uf au plat si tu pr\u00e9f\u00e8res, mais le jaune coulant qui se m\u00e9lange avec le reste, c\u2019est juste irr\u00e9sistible<\/li>\n\n\n\n<li><strong>sel et poivre<\/strong><\/li>\n\n\n\n<li><strong>graines de s\u00e9same<\/strong><\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h4 class=\"wp-block-heading\">Beef marinade:<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>sauce soja<\/strong><\/li>\n\n\n\n<li><strong>mirin<\/strong><\/li>\n\n\n\n<li><strong>huile de s\u00e9same<\/strong><\/li>\n\n\n\n<li><strong>sucre<\/strong><\/li>\n\n\n\n<li><strong>poivre<\/strong><\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">Bibimbap sauce:<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>gochujang<\/strong><\/li>\n\n\n\n<li><strong>mulyeot&nbsp;<\/strong>(sirop de ma\u00efs cor\u00e9en) &#8211; le sirop de ma\u00efs dilue le gochujang et apporte une petite touche sucr\u00e9e<\/li>\n\n\n\n<li><strong>huile de s\u00e9same<\/strong><\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">Quel type de riz mangent les cor\u00e9ens?<\/h2>\n\n\n\n<p>Les Cor\u00e9ens consomment principalement du <strong>riz \u00e0 grains courts<\/strong>, \u00e9galement connu sous le nom de <strong>riz rond<\/strong>. Ce type de riz est plus collant que le riz \u00e0 grains longs, ce qui le rend id\u00e9al pour \u00eatre servi en accompagnement de plats cor\u00e9ens. Sa texture moelleuse et l\u00e9g\u00e8rement collante permet de bien le m\u00e9langer avec les autres ingr\u00e9dients dans des plats comme le bibimbap.<\/p>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">Pr\u00e9paration<\/h2>\n\n\n\n<h3 class=\"wp-block-heading\">Pr\u00e9parer le riz, les l\u00e9gumes et la sauce<\/h3>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Cuire le riz. Une fois cuit, laisser refroidir au r\u00e9frig\u00e9rateur pendant au moins une heure (tu peux aussi le pr\u00e9parer plus t\u00f4t dans la journ\u00e9e). Utiliser du riz froid \u00e9vitera que ton bibimbap devienne p\u00e2teux.<\/li>\n\n\n\n<li>R\u00e9hydrater les champignons shiitake s\u00e9ch\u00e9s en les plongeant dans de l&rsquo;eau bouillante pendant environ 15 minutes.<\/li>\n\n\n\n<li>M\u00e9langer tous les ingr\u00e9dients de la marinade pour le b\u0153uf. Couper le b\u0153uf en lani\u00e8res et bien l&rsquo;incorporer \u00e0 la marinade. Laisser reposer au r\u00e9frig\u00e9rateur pendant au moins 30 minutes pour que le b\u0153uf s&rsquo;impr\u00e8gne des saveurs.<\/li>\n\n\n\n<li>Pr\u00e9parer la sauce gochujang en m\u00e9langeant tous les ingr\u00e9dients. R\u00e9server au r\u00e9frig\u00e9rateur.<\/li>\n\n\n\n<li>Presser l&rsquo;exc\u00e8s d&rsquo;eau des champignons r\u00e9hydrat\u00e9s et les hacher.<\/li>\n\n\n\n<li>Faire revenir les courgettes dans une po\u00eale avec 1 c. \u00e0 s. d&rsquo;huile de s\u00e9same pendant 1 minute. R\u00e9server.<\/li>\n\n\n\n<li>Faire revenir les carottes dans la m\u00eame po\u00eale avec 1 c. \u00e0 s. d&rsquo;huile de s\u00e9same pendant 1 minute. R\u00e9server.<\/li>\n\n\n\n<li>Dans la po\u00eale, faire revenir les champignons shiitake pendant 2 minutes avec 1 c. \u00e0 c. d&rsquo;huile de s\u00e9same, 1 c. \u00e0 s. de sauce soja, du sel et du poivre. R\u00e9server.<\/li>\n\n\n\n<li>Faire bouillir de l&rsquo;eau dans une casserole, ajouter les \u00e9pinards et les blanchir pendant environ 2 \u00e0 3 minutes. \u00c9goutter et presser l&rsquo;exc\u00e8s d&rsquo;eau des \u00e9pinards. Ajouter un peu de sel, 1 c. \u00e0 c. d&rsquo;huile de s\u00e9same et la moiti\u00e9 de l&rsquo;ail. Bien m\u00e9langer.<\/li>\n\n\n\n<li>Faire bouillir de l&rsquo;eau dans une autre casserole, ajouter les germes de soja et les cuire pendant environ 2 \u00e0 3 minutes. \u00c9goutter, ajouter une pinc\u00e9e de sel, 1 c. \u00e0 c. d&rsquo;huile de s\u00e9same et l&rsquo;autre moiti\u00e9 de l&rsquo;ail. Bien m\u00e9langer.<\/li>\n\n\n\n<li>Dans une po\u00eale, ajouter de l&rsquo;huile de cuisson et cuire le b\u0153uf marin\u00e9 \u00e0 feu moyen pendant 2 \u00e0 3 minutes, jusqu&rsquo;\u00e0 ce qu&rsquo;il soit cuit.<\/li>\n<\/ol>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h3 class=\"wp-block-heading\">Assembler le bibimbap<\/h3>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Chauffer ton bol en pierre&nbsp;sur la cuisini\u00e8re \u00e0 feu moyen, ajouter 4 cuill\u00e8res \u00e0 soupe d&rsquo;huile de s\u00e9same et bien badigeonner le fond. Ajouter le riz. Pendant que tu assembles le reste des ingr\u00e9dients, le riz commencera \u00e0 croustiller au fond. (Cette recette est pour 2 bols, donc diviser les portions en deux).<\/li>\n\n\n\n<li>Disposer les courgettes, les carottes, les champignons, les \u00e9pinards, les germes de soja et le b\u0153uf sur le riz. Organiser les ingr\u00e9dients comme tu veux !<\/li>\n\n\n\n<li>Faire un petit trou au centre avec une cuill\u00e8re et ajouter un jaune d&rsquo;\u0153uf.<\/li>\n\n\n\n<li>Saupoudrer de graines de s\u00e9same.<\/li>\n\n\n\n<li>Servir chaud. Ajouter autant de sauce gochujang que tu le souhaites, bien m\u00e9langer et d\u00e9guster !<\/li>\n<\/ol>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">Le dolsot bibimbap est-il v\u00e9g\u00e9tarien ?<\/h2>\n\n\n\n<p>Il existe de nombreuses versions du dolsot bibimbap. Je choisis g\u00e9n\u00e9ralement la version traditionnelle avec du b\u0153uf. Mais si tu es v\u00e9g\u00e9tarien, tu peux jeter un \u0153il au menu pour voir s&rsquo;ils proposent une version sans viande.
