Avec leur ext\u00e9rieur croustillant et dor\u00e9, ils renferment une garniture savoureuse et relev\u00e9e \u00e0 base de thon, de mayonnaise, de gochujang et de <a href=\"https:\/\/www.thatcutedish.com\/fr\/kimchi\/\">kimchi<\/a>. Les <strong>couches de riz grill\u00e9<\/strong> ! Ce CRUNCH tout luisant se marie tellement bien avec l&rsquo;onctuosit\u00e9 du thon piquant.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ils sont super faciles \u00e0 pr\u00e9parer (surtout avec un <a href=\"https:\/\/amzn.to\/3B1hl3D\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">moule \u00e0 onigiri<\/a>) et parfaits pour une petite collation \u00e0 emporter, ou \u00e0 partager lors d&rsquo;une f\u00eate ou d&rsquo;une r\u00e9union avec des proches \u2014 tout comme mes <a href=\"https:\/\/www.thatcutedish.com\/fr\/jumeokbap\/\">Jumeokbap au thon mayo<\/a>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">J&rsquo;avais envie de pr\u00e9parer des yaki onigiri au <strong>thon piquant et kimchi<\/strong>, on pourrait donc dire qu&rsquo;ils sont le r\u00e9sultat d&rsquo;une <strong>fusion de saveurs japonaises et cor\u00e9ennes<\/strong> (j&rsquo;ajoute ma petite touche cor\u00e9enne partout, autant que possible :D). En Cor\u00e9e, l&rsquo;\u00e9quivalent de l&rsquo;onigiri s&rsquo;appelle <strong>samgak kimbap<\/strong> (\uc0bc\uac01\uae40\ubc25 &#8211; kimbap triangulaire). \u00c0 chaque fois que j&rsquo;ai un petit creux ou que je n&rsquo;ai pas le temps de m&rsquo;asseoir dans un restaurant, j&rsquo;en prends un dans un convenience store.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Mais je dois dire que je pr\u00e9f\u00e8re de loin les yaki onigiri, simplement pour leurs c\u00f4t\u00e9s croustillants ! Ces couches croquantes ajoutent tellement de texture !<\/p>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">Le yaki onigiri, c&rsquo;est quoi?<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Le <strong>yaki onigiri<\/strong>, c&rsquo;est un plat japonais pr\u00e9par\u00e9 \u00e0 partir de <strong>boules de riz grill\u00e9es<\/strong>. Le mot \u00ab <strong>yaki <\/strong>\u00bb signifie grill\u00e9<strong> <\/strong>ou cuit \u00e0 feu direct, tandis que \u00ab <strong>onigiri <\/strong>\u00bb fait r\u00e9f\u00e9rence \u00e0 des boulettes de riz, souvent fa\u00e7onn\u00e9es en triangles ou en rondelles.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ils sont pr\u00e9par\u00e9s avec du riz blanc \u00e0 grains courts (riz rond), et sont parfois fourr\u00e9s d&rsquo;ingr\u00e9dients savoureux comme l&rsquo;<a href=\"https:\/\/fr.wikipedia.org\/wiki\/Umeboshi\" target=\"_blank\" rel=\"noreferrer noopener\">umeboshi<\/a> (prune marin\u00e9e), les <a href=\"https:\/\/amzn.to\/3TIk3or\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">flocons de bonito<\/a> ou encore le saumon grill\u00e9. Une fois fa\u00e7onn\u00e9s en triangles ou en rondelles, ils sont grill\u00e9s ou po\u00eal\u00e9s jusqu&rsquo;\u00e0 devenir <strong>croustillants \u00e0 l&rsquo;ext\u00e9rieur<\/strong> \ud83d\ude0d<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">On badigeonne g\u00e9n\u00e9ralement les deux c\u00f4t\u00e9s de l&rsquo;onigiri d&rsquo;un m\u00e9lange de sauce soja et\/ou de mirin, mais certains pr\u00e9f\u00e8rent utiliser du miso ou de la mayonnaise \u00e0 la place.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Tu peux servir le yaki onigiri comme collation ou en accompagnement, et le d\u00e9guster seul ou avec des garnitures vari\u00e9es comme des algues nori, des graines de s\u00e9same ou encore de l&rsquo;assaisonnement <a href=\"https:\/\/amzn.to\/47M12Hs\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">furikake<\/a>.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"1200\" height=\"1800\" src=\"https:\/\/www.thatcutedish.com\/wp-content\/uploads\/2023\/05\/yaki-onigiri-with-tuna-and-kimchi-2.jpg\" alt=\"yaki onigiri fourr\u00e9s de thon piquant et kimchi.\" class=\"wp-image-18597\" srcset=\"https:\/\/www.thatcutedish.com\/wp-content\/uploads\/2023\/05\/yaki-onigiri-with-tuna-and-kimchi-2.jpg 1200w, https:\/\/www.thatcutedish.com\/wp-content\/uploads\/2023\/05\/yaki-onigiri-with-tuna-and-kimchi-2-133x200.jpg 133w\" sizes=\"auto, (max-width: 1200px) 100vw, 1200px\" \/><\/figure>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">Ingr\u00e9dients<\/h2>\n\n\n\n<h3 class=\"wp-block-heading\">riz<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>riz \u00e0 sushi<\/strong> \u2013 utilise du riz \u00e0 grains courts, sp\u00e9cialement con\u00e7u pour faire des sushis. Pour ma part, j&rsquo;ai toujours un sac de riz cor\u00e9en, donc c&rsquo;est ce que j&rsquo;utilise car le riz cor\u00e9en est un riz \u00e0 grain court et s&rsquo;utilise pour pr\u00e9parer les kimbap ou samgak kimbap (onigiri cor\u00e9en).<\/li>\n<\/ul>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\">\n<p class=\"wp-block-paragraph\"><strong>Note<\/strong>: le terme \u00ab riz \u00e0 sushi \u00bb peut avoir deux significations :<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Il peut d\u00e9signer un type sp\u00e9cifique de <strong>riz \u00e0 grains courts<\/strong> couramment utilis\u00e9 pour les sushis. Ce riz a une texture collante qui permet de fa\u00e7onner facilement des rouleaux de sushi ou d\u2019autres formes. Le riz utilis\u00e9 pour faire des yaki onigiri n\u2019est g\u00e9n\u00e9ralement pas assaisonn\u00e9, et c\u2019est \u00e0 cette interpr\u00e9tation que je fais r\u00e9f\u00e9rence lorsque je parle de \u00ab riz \u00e0 sushi \u00bb.<\/li>\n\n\n\n<li>Il peut aussi faire r\u00e9f\u00e9rence au <strong>riz assaisonn\u00e9<\/strong> qu\u2019on utilise dans les sushis, avec du vinaigre, du sucre et du sel. Ce riz est essentiel pour diff\u00e9rentes vari\u00e9t\u00e9s de sushis.<\/li>\n<\/ol>\n<\/blockquote>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>furikake<\/strong> \u2013 le furikake n\u2019est pas indispensable pour pr\u00e9parer des yaki onigiri, mais il ajoute beaucoup d&rsquo;umami au riz.<\/li>\n\n\n\n<li><strong>sauce soja<\/strong> \u2013 utilise de la sauce soja classique, mais fais attention \u00e0 ne pas prendre de sauce soja fonc\u00e9e, qui rendrait tes yaki onigiri trop sal\u00e9s.<\/li>\n\n\n\n<li><strong>mirin<\/strong> \u2013 badigeonner les yaki onigiri de mirin non seulement am\u00e9liore le go\u00fbt, mais aide aussi \u00e0 caram\u00e9liser le riz et \u00e0 cr\u00e9er une texture croustillante \u00e0 l\u2019ext\u00e9rieur. Le mirin apporte \u00e9galement une touche sucr\u00e9e qui \u00e9quilibre bien la sauce soja sal\u00e9e.<\/li>\n\n\n\n<li><strong>algue nori<\/strong> \u2013 facultatif. Personnellement, je n\u2019enveloppe pas toujours mes yaki onigiri avec des nori, je pr\u00e9f\u00e8re ajouter du furikake au riz pour avoir ce go\u00fbt d\u2019algue. Mais si je pr\u00e9pare des onigiri pour les partager avec amis ou famille (ou si je dois les photographier !), j\u2019aime bien les envelopper de nori (pour l&rsquo;\u00e9sth\u00e9tique).<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h3 class=\"wp-block-heading\">thon piquant<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>thon en conserve<\/strong> \u2013 tu peux utiliser du thon en conserve dans de l\u2019eau ou dans de l\u2019huile. Le thon dans l\u2019huile apporte cependant un peu plus d\u2019onctuosit\u00e9 et de saveur au thon piquant. Je te recommande d\u2019utiliser du <a href=\"https:\/\/amzn.to\/3NJpktM\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">thon en conserve cor\u00e9en<\/a>, qui a meilleur go\u00fbt que le thon que l&rsquo;on peut trouver par ici. Il est fait avec du thon de meilleure qualit\u00e9, ce qui donne une saveur plus riche, moins sal\u00e9e et avec une texture plus agr\u00e9able.<\/li>\n\n\n\n<li><strong>Kewpie mayo (mayonnaise japonaise)<\/strong> \u2013 la kewpie mayo est plus cr\u00e9meuse et plus riche que la mayonnaise classique. Si tu peux, utilise celle-ci. Si tu n\u2019en as pas, tu peux utiliser de la mayonnaise ordinaire, mais ajoute une pinc\u00e9e de sel. La kewpie mayo est l\u00e9g\u00e8rement plus sal\u00e9e \u00e0 cause du glutamate monosodique (MSG), c\u2019est pour \u00e7a que je n\u2019ai pas ajout\u00e9 de sel dans cette recette. Si tu utilises de la mayonnaise classique, pense bien \u00e0 en ajouter un peu.<\/li>\n\n\n\n<li><strong>gochujang (p\u00e2te de piment rouge cor\u00e9en)<\/strong> \u2013 le gochujang apporte un peu de piquant \u00e0 la mayonnaise au thon, mais si tu pr\u00e9f\u00e8res une mayonnaise au thon classique, tu peux tr\u00e8s bien omettre le gochujang. Veiller \u00e0 ne pas trop le cuire. Laisser refroidir l\u00e9g\u00e8rement avant de fa\u00e7onner les yaki onigiri.<\/li>\n\n\n\n<li>Dans un bol, m\u00e9langer le riz cuit et le furikake. R\u00e9server.<\/li>\n\n\n\n<li><strong>Pr\u00e9parer le thon piquant<\/strong>&nbsp;\u2013 Dans un autre bol, m\u00e9langer le thon, la kewpie mayo, le gochujang, le kimchi et l&rsquo;huile de s\u00e9same. Bien m\u00e9langer.<\/li>\n\n\n\n<li><strong>Fa\u00e7onner les yaki onigiri<\/strong>&nbsp;\u2013 Mouiller ses mains avant de fa\u00e7onner les onigiri, ou porter des gants afin d&rsquo;\u00e9viter que le riz ne colle.<\/li>\n\n\n\n<li>Placer du riz au fond d&rsquo;un moule \u00e0 onigiri, ajouter la garniture de thon au centre, puis recouvrir de riz en s&rsquo;assurant de bien entourer la garniture. Presser fermement pour former l&rsquo;onigiri. Ajouter les onigiri et les faire frire 2 \u00e0 3 minutes de chaque c\u00f4t\u00e9, jusqu&rsquo;\u00e0 ce qu&rsquo;ils soient dor\u00e9s et croustillants&nbsp;<em>(Note 4)<\/em>.<\/li>\n\n\n\n<li>Baisser le feu, badigeonner l\u00e9g\u00e8rement les onigiri avec la sauce soja, les retourner, et cuire encore 1 minute. R\u00e9p\u00e9ter de l&rsquo;autre c\u00f4t\u00e9.<\/li>\n<\/ol>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\">\n<p class=\"wp-block-paragraph\"><strong>Note<\/strong>: Le yaki onigiri est g\u00e9n\u00e9ralement grill\u00e9 sur un grill de cuisini\u00e8re ou un barbecue. Pour le griller, il suffit de chauffer le grill \u00e0 feu moyen-vif et de placer les onigiri dessus. Placer les onigiri sur une bande de nori, puis plier les extr\u00e9mit\u00e9s sous l&rsquo;onigiri.
